I feel like this post should come with a warning.
If you’re the jealous type…then look away, because this post may just make you wish you were engaged to my fiancé 🙂
I’ll post more on the rest of my weekend meals later, but Sunday night deserves it’s own (detailed) explanation. Kyle told me that he’d have a surprise waiting for me when I got home, and sure enough, I was totally blown away!
He used the recipe for PF Chang’s lettuce wraps to replicate their famous dish – with a vegan (and HHH) twist. For the “meat” he used LightLife smart grounds and instead of rice, he used quinoa. So cute, right? The rest of the feast included avocado, roasted red peppers, pineapple, edamame, corn, sautéed onions…and the best ingredient of all…San-J Sweet and Tangy Polynesian Glazing and Dipping sauce.
Kyle was so proud, and rightfully so, the meal was amazing.
I was way too ambitious with my first lettuce cup bowl, and included EVERY ingredient, but by my 4th, I had the routine down.
I’m not sure if food gets more beautiful than this? It certainly doesn’t get tastier! This meal will definitely become a regular in the rotation.
For dessert I combined two of the latest trends in the blog world, banana soft serve “ice cream” and PBU.
I made a few changes (purely out of laziness): instead of blending the frozen banana slices, I just set them out to thaw for a few minutes while I prepped the PBU. You may have noticed that when I poured the creamy peanut butter-y sauce on the naners, it started to freeze a bit, too. All good in my book. The above is a new peanut butter, and it’s good, but doesn’t rock my boat the way some others have in the past. I think almond butter may be my next purchase. I’m not sure how Kyle will feel about it, but so far, so good.
Kyle had ginger crème Newman’s O’s (I may have tried a couple myself) but I could tell he was second guessing his refusal for a serving of what I had. We may have a vegan convert on our hands…(just kidding). The ginger O’s weren’t exactly the best flavor. Imitation Healthy Oreo cookies should stick to the flavors that work (chocolate).
For the record, I didn’t want this post to turn into a sap-fest because it’s a food blog, not a vow writing session (and Laura would vomit at the mention of the L word), but just to be clear…I’m pretty darn lucky, and yes, I know it.
Aww how sweet of the fiance!!! Just cooking for you is sweet in my book, but that’s quite a creative dish for a man!

your fiance is adorable! what a winner! i can’t get over how cute and thoughtful and creative that dinner was. and by the way, the brand that makes that peanut butter is the same brand that makes my raw almond butter. i highly recommend trying that next. it’s the best! but kind of expensive.

Yeah, I am with you on the healthy Oreos. I think the mint Newman O’s are pretty good, actually!
I may just steal that idea if you don’t mind. I have about 5 heads of lettuce in our garden that need to be used asap. Now if only I can plant the idea to cook it all for me in my husband’s head….
