As per my previous few weeks, my Wednesday was more snack-y than meal-y in the AM.
In addition to toast with Earth Balance and cantaloupe, I had home-made candied walnuts and a few dried pineapple rings. Not exactly a normal breakfast but it got the job done. So at noon I headed out to YogaWorks and did my thing. And by the time I got home I wasn’t starving, but I was definitely hungry.
Roasted butternut squash, quinoa and a Sunshine veggie burger. Typical Elise plate – quick and covering all the main meal components. Veg, grain, protein, check, check, check.
I had roasted the squash already the previous night.
I took a simple approach to it – halved it, covered it in olive oil, placed them flat side down in a pan, added an inch or so of water, and cooked it for 35 minutes. I flipped it for the last few minutes and cranked the oven up to broil.
I’ll admit, the ketchup and mustard topping is pretty ghetto, but it seemed to go well with the burger. I added some hummus later on though. More what you’d expect from me, right? I really have no clue why it didn’t occur to me initially. I’m going with temporary insanity.
Since lunch was so late (2:30ish) I didn’t need any snack or anything to hold me over until dinner. Which was lasagna. And that’s the last of the lasagna.
I had candied ginger and dark chocolate on the late night. 🙂
I think that looks perfect. Ghetto would be tarter sauce.
And I don’t mean, like, from the hood per say…
how much are you loving yoga?!?! do you feel taller and super relaxed when you leave class? that’s how i feel. and then i walk out of equinox onto the streets of crazy effing new york city and the stress comes right back. such is my life.

oh my gosh butternut squash! that’s making me really excited for fall! and wow – those home-made candied walnuts sound pretty darn incredible! yum!
i love it. i havent noticed it making me feel taller, but i do feel much more stretched out and zen. the former is good, but the latter is ESSENTIAL. plus, its on montana and we all know that makes for some excellent window shopping on the walk home.
Butternut squash with ketchup and mustard sounds totally amazing to me! Add the creamy hummus and you’ve got a winner!
