I have been living a #treatyoself week and while I’m loving it, I’m also ready to clean things up a bit and reign in my portions.
Appearances aren’t everything.
Anyway, it’s my birthday, so I am just gonna soak it up a little bit longer.
I made the above cake for myself…and then there was this one (below) that my mom made for me.
Is that not the most gorgeous thing ever!
After my first slice, I licked the extra frosting clean. Then I was buzzing quite a bit. Sugarrrrrrr.
In other dessert news, my g-ma shared her fancy chocolate with me!!! [The one on the right was gifted to her for her 90th birthday but she so SO generously shared with her chocoholic granddaughter. She’s the freakin’ best I tell ya!] I got two more Alter Eco dark coconut toffee bars with my last Thrive order, and it remains my absolute favorite chocolate bar. But that Green & Black’s organic dark chocolate with hazelnuts and currants was also awesome. It’s so rare that I have either hazelnut or currants, and the ratio of nuts to chocolate was just the way I like it (heavy on the nuts). Mmmm. Added to the rotation.

So this cake I made for myself was sugar free. But it wasn’t worth sharing.
If doubled, I think the recipe would be perfect. As is, it made two 9 inch cakes that were too thin. If you want to make one 9 inch cake, use the recipe as is and just pour it all into one pan.
I made the frosting with the solid portion of a can of coconut milk plus cocoa powder and NuNaturals liquid stevia.
Combine everything, bake at 350 degrees F for 25 minutes.
