What I Ate

Going back to the old school “what I ate in a day” style posting for the day because I took photos of it all!  And why not!

First things first, iced coffee.  I use the previous day’s (leftover) coffee and add coconut sugar (melted in warm water) and almond milk.  Then I toss in some ice and hit the road.  Off on a walk with my little man.  We have a few different route options but his favorite, of course, is the one that passes the farms with a horse and goats.  They are a few blocks apart, and the goats aren’t always there, but the horse is.  We usually see bunnies on that route too.  The other way isn’t as fun for P because it’s through a neighborhood so I don’t do it unless it aligns with garbage day.  That way he sees lots of trucks and dumping and fun stuff.

After our walk I shower and then we make breakfast.  I do my second cup of (decaf) joe while feeding him, and then towards the end of his meal I start making mine.

Waffle + fried egg.  As long as we have ripe enough bananas, I make this meal for breakfast, no exceptions.  It’s important to buy tons of bananas to make this happen because Kyle likes greener bananas, P likes medium ripe bananas, and I like suuuuper ripe bananas.  So unless we buy 20 a week, I don’t get any because they don’t reach my desired level of ripeness.  Which is why the grocers at TJ’s probably think we have a pet monkey.

Lunch.

Mega pasta salad with GF noodles, canned salmon, home-made balsamic vinaigrette dressing, hemp seeds, and veggies galore.  The more veggies the better, right?  Tomatoes, corn, celery, cucumber, spinach (frozen and fresh), bell peppers, etc.

I have been making this in bulk on the weekends because it’s easier than prepping something mid-day.  Pacman is doing one nap but it only rarely covers my lunch time so I don’t make or eat many meals solo.

In the afternoon, we do our errands and whatever the day’s event is (swimming, music class, park, play date, train museum, zoo, etc.).  We have made really good friends here in Davis and I love that pacman has baby friends that he interacts with on the regular.

Snacking is hard because P always wants in on the fun, so it has to be kid friendly.  Watermelon and frozen figs for the win (all fruit is good in my book…I love you summer).

Smoothies are another staple.  P only recently figured out straws well enough to drink with purpose so it’s been a huge help as he is teething.

This drink was sooooo good – I had about half the jar of the ginger lemon drink (on the left) remaining and so I blended it with a few chunks of frozen mango and ice to make an awesome mango ginger lemon slushy.  P cries like mad as soon as I pulled out the blender so I had to go quick.  He hate hate hatessss the blender.  Even though I hold him and sooth him while it’s on, let him touch it, AND let him sample the slushy (which he loved), he still doesn’t stop crying until the blender is cleaned and packed away.  It’s so sad.  He sobs “bye bye, bye bye” as a command to me to try to make it go away.

Unless it’s Wednesday (farmer’s market), we eat dinner at home after P goes down.  His routine is the same every night – take a bath, brush teeth, put on PJs, read a story, drink a bottle with me in the rocking chair…then to the crib.  Just like his mama, he’s a creature of habit and thrives on the familiarity and structure.

I cook dinner throughout the day, prepping as much as I can ahead of time during his nap and finishing off the meal while I feed P dinner.  This way he can eat components of our dinner too.  If our meal is not ready when I’m feeding him, I’ll give him leftover parts of previous meals (which is the perk of us all being on the same diet).  Kyle usually gets home from work when I’m feeding P or almost done, so he usually gets to play with him while I finish dinner.  Unless Kyle’s out of town, we do the bedtime routine together as a family.  We are like a well oiled machine.

Kyle was out of town this week so I had leftover chickpea wild rice salad (above) and a mish mash salad on the side with spinach, quinoa, cucumber, carrot, and avo.

For dessert I had 2/3 of this bar, which Kyle bought me as a treat before he left town.  It’s kinda weird.  I thought it would be like a chocolate bar stuffed with nut butter, but the filling was white (creme if you will) and didn’t taste very almond-y to me.  I still ate it, but it wasn’t the bar I was expecting.  Also, it could have used some flaked salt on top.

    I need to try your egg on a waffle combo. That sounds delicious. How do you make the waffle? I was ooooing and ahhhing over that chocolate bar until you went into detail about it. Major bummer!

    It’s odd because I neither really like avocado nor quinoa but your dinner side salad looks so good to me. Maybe it’s a sign I need to give both another try?!
    Having a family bedtime routine sounds really nice. My dad usually came home from work when me and my siblings were in bed already. On days he was earlier he read us a story, too, though, which was even more special then.

    I bet Pac-man is going to get a kick out of the fact that he hated the blender when he was older. Apparently when I was around his age, I was terrified of ceiling fans.

    thats especially hilarious because P is OBSESSED with ceiling fans. well all fans really, but he LOVES ceiling fans. he waves his hand “around and around” whenever he sees them and will point them out every chance he gets. one of the biggest perks of our new house was that every room has a celling fan. aka, pacman heaven.

    I love these posts! Theo hates the blender too (but loves my smoothies). I’ve been using it more recently since the weather’s so hot. Maybe he’ll be used to it by the time I possibly pack it away for the winter! We have a well-oiled routine for Theo too- he loves it and it totally suits my type-A-ness. Love, love, love the look of your pasta salad- hadn’t thought of making a batch of pasta salad. Totally going to do that this weekend.

    Do you ever make cold brew coffee? I’ve been doing that all summer and love it. That’s too funny that the three of you like different banana ripeness.
    Can you use your immersion blender for smoothies? Or so that one freak out P too…? That does look like a delicious day, and I’ll be making the chickpea rice salad this weekend!

    What kind of GF pasta do you use for your pasta salad. I find the ones I have tried don’t hold over well to the next day.It gets hard.
