It’s been a minute since I did a “day of eats” style post, so here we go.
This is from last weekend. We had two birthday parties and church so I definitely wasn’t spending hours over the stove. It’s good to have a game plan (or lots of back up options!) for these kinds of days. I’m a meal planner extraordinaire but sometimes I leave weekend days open for finishing off leftovers, odds and ends, or mayyyyybe just maybe eating out (it’s rare but a girl can dream).
First up, grain free banana bread with cultured vegan butter. I love Miyoko’s butter! Somehow it has a richness that Earth Balance doesn’t. There’s a depth of flavor (I’m guessing from the culturing process?). Highly recommend.
For lunch I finished off a slab of smoked salmon with roasted Brussels sprouts and candied walnuts on the side.
Then it was off to birthday party numero DOS!
We didn’t end up leaving the party until 5:15 so I knew dinner had to be something I could make fast.
We had wanted skewers from Nugget again because the first time we got them they were SOOOO awesome. If you are local and haven’t had these, you should totally try them. They are sold at the meat counter and are already marinated and skewered so all Kyle did was throw them on the grill. But now that I’ve sung their praises they will probably sell out because that’s what ALWAYS happens to my favorites.
So anyway…I was browsing the produce section looking for inspiration when I saw the bok choy. It fit with the Asian theme and would be fast enough to make once I got home (as opposed to roasting something).
We also had radishes left over from a while back and homemade teriyaki (yes I know I spelled it wrong above :P) soooo…side dish done!
Pro tip for parents: if you add sweet and sticky teriyaki sauce to radishes, your kids will eat it.
So will your husband. And then he will say, what were those red things and you will smile and say don’t worry about it. I do the same thing with eggplant. He’s too scarred for me to try it with zucchini, but that’s fine because the rest of us are happy to eat his share.
For dessert I had a small plate of random chocolates – dark chocolate walnuts, a TCHO milk chocolate and Ghirardelli’s sea salt soiree, plus a peppermint creme from last Christmas (I found a box of them in the freezer and so you’ll be seeing them for a bit because I gotta finish them before this holiday season hits).
And there you have it. Sweet way to wrap up the day.
