I just want everyone to know that’s how I read “WIAW.” Yes, I’m weird.
So each week, when Wednesday rolls around, and the whole blog world shares their “What I Ate Wednesday” posts, I’m constantly doing Indian chants in my head. Better than out loud I suppose…
Maybe you want to click away from my crazy blog now. Or maybe you’ll read WIAW like that from now on, too. Sorry.
This is actually what I ate on Tuesday, posted on Wednesday. But, WIATPOW doesn’t really roll off the tongue.
5:30 – coffee with almond milk (no photo)
6:15 – banana cinnamon raisin bread en route to el hospital. For those who keep asking about the recipe, I really didn’t write it down, but I used this recipe with several changes. I left out the pumpkin puree, used 1 banana, and altered the flour ratio (since it was a smaller loaf I used 1/2 cup ww flour and 1/2 cup oats).
9:45 – oats eaten in a huge rush before morning rounds.
Oatmeal with almond butter, raisins & bananas.
11:30 – snack attack in the form of a home-made fruit & nut oat bar
13:00 – lunch break what whaaat
Quinoa, kale, sweet potatoes, edamame, & butternut squash.
14:00 – home-made banana bread square for dessert before I headed back to the unit
17:30 – TJ’s packet of dried fruit with cashews and almonds
19:30 – candied ginger on the way home from work
20:30 – lasagna spring rolls (recipe coming soon!) eaten with my fingers while snuggling on the couch in my PJs and six layers of blankets (now there’s an image, eh?)
You guys will die when I share this recipe. Totino’s pizza rolls have met their (healthy, vegan) match.
I had a kale salad on the side with steamed (chilled) greens, avocado, and tofu ricotta.
21:00 – dessert time!!

You are a saint. Thank you for offering an organic, vegan, gluten free treat that mimics the flavors of Reese’s without any of the unpronounceable ingredients. You rock! The ratio of fair-trade dark chocolate to nutty inside blew my mind. Hooray for your sustainable ingredients and eco-responsible practices. But more than anything, I love that you made both chocolate peanut butter cups one serving. Because there’s no way anyone could eat one cup and then save the other one for later.

What exactly is FODMAPS? I have never heard of it before and really want to try it out because I also have IBS.

What brand of B12 supplement do you use? I have been looking around and am confused on all the different brands their are!!!
I always find your daily eats so inspiring! Not because they are super healthy (they are) but because you are so true to yourself, your tastes and your body. It’s so NOT trendy…you know? Like there’s always a point in the HLBs where everyone starts eating alike and you’re like, ‘Seriously?’ But I always find your days to be refreshing!

I will never be able to read ‘WIAW’ as an acronym ever again. It’s now my new war-cry.
Forgive me for such a trite comment, but I literally want to nibble every single thing in those post off my computer screen. I also admire the way that you space out your food eating little and often – my IBS would be so much better (as would my weight!) if I could control myself and stop gorging on huge meals all at once.

Girl, I wish you would pack all my work eats for me every day too. You always have everything I wish I was eating too. You somehow make things as simple as quinoa with sweet potatoes look like gourmet cuisine. I can’t wait for the lasagna spring rolls recipe! I’m sure I’ll love em!

i cant wait to try more now. mmm…
on non-work days i take them during the day. on work days i can hardly make sense of who i am in the morning so i rarely have the wherewithal to take vitamins (sadly), which means i take them when i get home. ive never even noticed a stimulating effect. i use a powdered b12 which i mix into water or OJ. the multi i take is so gross and massive i gag every time i take it.
i found them at whole foods, but it was quite a search! the first few i went to only had the milk chocolate ones. they are usually either in the checkout aisles or next to the bars.

i just switched brands actually. now im using a powder mix that i add to water or juice. its from a whole foods product called “B 12 Energy now!” theres also b12 in my multi – i figured different routes would ensure i get it.
