It’s been a couple of days and she is making huge strides, but still not able to walk. She is thrilled about her now abundant outfit choices though, that’s for sure. And shoes!
On Wednesday I had half of this (it’s quite sweet) before stroller strides.
And then this afterwards, in the 30 minute window I had before music class with V.
Beta Boom is my favorite green juice. It has enough sweet stuff (carrot, orange) to neutralize the intensity of the greens, but doesn’t taste as sweet as the apple ones or as “green” as the all green ones. Sun & Soil had a good deal last weekend so I got a few. Weakness!!
Finishing things off for lunch – including the last of this salad with the last of the chips and carrots.
I wasn’t sure if we were going to farmer’s market that night, but I knew I wanted to make dinner rather than buy it because we had too much food to use up before leaving town. I refuse to waste anything, so whatever will go bad I will use up or freeze by Thursday!
For Kyle and myself, I made the Thai shrimp and salad from my gobble shipment. It was a two person serving, so the kids had a bunch of different leftovers. Perfect!
First I made an egg white cornstarch mix, which I coated the shrimp in, before frying them up.
I left the peanuts off the slaw even though P wasn’t having any just because I keep peanuts out of the house in general.
Fresh herbs in the perfect amount! Means I don’t have a bunch of things wilting in the crisper drawer while I’m gone 🙂
There was extra corn starch egg mix, so I coated the chicken from a different gobble meal and fried them up so they’d be good when I came back.
Never hurts to have fried chicken on hand after you come back from a weekend trip right? Right. The chicken is meant to be a part of a udon noodle dish so I’ll probably just use it in that when we get home because the stuff in that gobble meal won’t go bad.
Snacks before market turned into celery and strawberry castle building. Obviously.
She’s got the whole world in her hands. And a whole apple in her mouth.
When we got home we enjoyed this stellar meal, all ready to go!
OMG – the sweet thai chili sauce on the shrimp!!!!! I wanted to drink it all.
I had some quinoa and avocado to use up, so we had that on the side.
SO. YUM. I feel like a broken record but for reals guys – gobble is awesome and they have a deal for 6 meals for $6 right now so you should totally get on it. I’m thinking I should become an affiliate for them or something because of how much I talk them up!!
Next time I see this meal come up on gobble again I’m going to get a bunch of servings! Ha. And if my family gets sick of it, then I’ll just make it all at once and have it for my own lunches all week long. 🙂
I really really wasn’t going to have dessert, but I decided to do stroller strides the next morning, so I had to carbo load 😉 JK. I mean, I did sign up for a second day IN A ROW of SS but that had nothing to do with my decision to give in to my sweet tooth.
I got this brittle at a market in the Ferry Building back when I went on my weekend trip with P. I didn’t know what to expect but it was SOOOO good. Crispy and crunchy but not in a tooth breaking way and not crazy sweet either thanks to the very small chocolate dipped portion. Basically it was the perfect marriage of candied nuts, salt, and dark chocolate. And it’s vegan and GF too. So if you see these out and about in the Bay Area, get them!
The next morning I went to stroller strides and who buddy am I ever feeling those back to back intense workouts. Normally V has a creative playtime class on Thursdays but it got cancelled this week so I figured I may as well fit in an awesome workout with my friends before heading out of town.
I almost forgot about these! I bought the raw crusts at WF last week because I had been missing them, and then I found the smoked turkey a while ago at the co-op and it took me two more visits before I finally succumbed. Apparently I really like smoked stuff? In lieu of smoked salmon on my raw spirulina cracker crust, I topped went with the smoked turkey.
It tasted EXACTLY like I imagined it would. Do salty and good.
No more pics from the day because we were off!
I froze these into popsicle molds before I left so that will be awesome to come home to.

Question for you, do you have any tactics for planning / creating meals to avoid waste. I’m working on eating down our pantry and generally avoiding food waste so that I can justify my kombucha addiction.😉
It seems like you rework meals to use everything up – wondering if there’s any methods to this you can share? As well as maybe choosing quantities when shopping? (I’ve got a small appetite two year old and a carnivore husband with allergies.)
Hmmm…I’ll try to keep thinking about this and see if there’s anything I can share, but for the most part I just shop for one week at a time and if we have a bunch of stuff in the fridge, I will forgo shopping for meals one week and just get essentials (like milk) and force myself to use up what we have. I add things to the grocery list throughout the week if we run out – chickpeas, raisins, whatever, but WILL NOT go to the store mid week. I make myself be creative and make do with what we have on hand until it’s time to grocery shop for the whole week. No mid week trips keeps me honest and keeps impulse stuff to a minimum. I’m not sure if that helps any, so I’ll keep thinking if there are any ways I come up with for incorporating ingredients to minimize waste.
I am incapable of making a single serving smoothie so I’m always freezing the extras, usually as ice cubes which eventually turn into a smoothie of random leftover ice cubes with some almond milk :)) I don’t know how you could have gone to the farmers market without buying produce! Too much temptation for me! I actually brought a bag of farmers market sugar snap peas and cherry tomatoes with me as plane snack on my way back from CA. (The bag of baby artichokes was in my luggage ;))
I can’t find those spirulina crusts anywhere here!! I think i’m just going to order online, they have breakfast crisps that sound delicious too- they seem perfect for bringing in my work lunches
The breakfast ones are good too! Not really that sweet so you could kinda get away with using them in a savory way too. I mean, if you’re desperate…not that I can relate… 😉
