These are the product of an extreme baking binge a few weeks ago.
The only reason I held off in sharing them was because I hadn’t tried them (and therefore didn’t know how they’d turned out).
If you’ve read my blog for any amount of time, you know I’m not one to practice self restraint, so allow me to clarify why I waited a week to try my own baking…
I had three other treats (maple oat muffins, banana bread and chocolate chip cookies) already filling my daily sweet quota. And since each was only barely half eaten, I figured it would be better to finish one before starting something new. Maybe it’s an OCD thing.
Anyway, Kyle has been ooohing and aaahing over these ever since I finally let him dig in.
Chocolate Brownies
[vegan]
Ingredients:
- 2 cups all purpose flour
- 1/3 cup sugar (I used Chatfield’s)
- 1/3 cup unsweetened cocoa
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/3 cup oil (I used canola, but melted coconut oil will work too)
- 1 1/2 cup almond milk (I used unsweetened vanilla almond breeze)
- 1/2 cup water
Directions:
Mix dry ingredients in one bowl and wet ingredients (except water) in another bowl.
Combine and stir.
Assess thickness of batter and add extra 1/2 cup of water if needed.
Mix.
Pour into a greased pan (I used an 8 x 8 inch pan). Bake for 35 minutes at 350 degrees (or until a toothpick comes out clean).
Wait for them to cool, then slice and enjoy.
Soft and fluffy inside with a perfect brownie crust on top.
Have you tried these with a non-wheat (gluten or FODMAPS free) flour yet? I recently made a delicious vegan chocolate cake (yes, I made my own Mother’s Day cake, hee hee). I used half brown rice flour and half oat flour. It was super delicious, but too crumbly to come out of the pan, even though I had greased and floured the pan. Next time I will line the pan with foil or wax paper.

Yummm, brownies are such a classic dessert and I never make them. I should change that.
I’m completely the same about needing to finish one batch of things before starting another! Though sometimes it’s ridiculously hard to wait 😛 These look lovely! I’d totally ice them with peanut butter.

I just made these and they taste great! Mine were more cake-like (almost exactly like your typical “crazy cake” recipe) than expected, and almost too dry… but with some chocolate icing on top, very good. I used Kahlua instead of vanilla 😉
Err… added about a tsp of Kahlua along with the rest of your ingredients, I guess. Heh.

A good chocolate cake recipe, but in no way brownie- like.
Worst vegan brownies ever….
I just made these for a sick day indulgence and they turned out pretty well, despite the relatively low amounts of sugar and chocolate compared to other recipes I looked at. I forgot I can’t smell or taste much with this cold, so they’re probably wasted on me, but they have a nice fluffy texture and with some icing they’d be ready for dessert.
My tweaks: olive oil instead of canola for a little savory edge, a dash of extra sugar and cocoa, and a tsp of vanilla. Next time I’ll try Kahlua or mint extract too.
