How was everyone’s holiday? My kids had the whole week off which felt like both a relief and a burden – the freedom to fill our days with the activities we enjoy on our own timeline is something we have greatly missed, but I’d be lying if I said it was all easy breezy. The absence of any direction or agenda left us a bit unmoored at times. On the whole though, it was nice, and the return to (home) school will be difficult.
I had plans to make stuffed shells but decided to make a soup instead with all the same ingredients. It’s kinda like the skinnytaste lasagna soup I have made a few times before but with a different pasta shape. I have actually made it with small shells before already.

This time I added kale too.

I had some shredded cheese left over in the fridge but then I opened this cheese too.

If you’ve never had the TJ’s unexpected cheddar cheese then you are missing out. It’s SO good. It tastes more like parmesan than cheddar to me, but the consistency is like a soft cheese and it does have a subtle cheddar flavor. It is so unique that it makes it hard to describe, but it melts pretty nicely and was a delight in this recipe.

This is a four cheese blend, not the unexpected cheddar, so you’ll have to buy it on your own to try it.
