Trees and Shells

Continuing the theme of almost home-made meals…

This was another seriously basic dinner that turned out fabulous.  It had four ingredients – two real, two from a plastic tub.

Earth Balance soy-free vegan buttery spread plus Follow Your Heart vegan gourmet cream cheese.

I boiled a cup of durum wheat pasta shells then tossed broccoli into the boiling water at the end (stems and all).

The good thing about both Follow Your Heart and Earth Balance is you get a lot of bang for your buck.  I’m not talking about the price, I’m talking about how little you need to make your taste buds dance.  Just a spoonful of each adds some real flavor to each bite.

    Mmmm I love buttery pasta w/ broccoli! That was like a childhood staple for my family and we loved it! I like the idea of adding just a touch of cream cheese and touch of buttery spread to the pasta to really bring out that salty yummy flavor!

    which… reminds me that i DEF need to write about THAT story. thanks for the inspiration. i may also tell the story of the golfer whose sweatshirt i pilfered in the middle of the night before running home barefoot. oops.

    Hahaha. I love that story! That was the night we all set out to collect ucla athletic apparel…I came home with a national champion watch and soccer warm ups. And as I recall none of us had keys to the apt…and I broke into our home through the window. Oh midvale days…
