Top two of the weekend

This is the rainbow lunch mish mash that I heaped on my plate Saturday.

On the bottom is a cauliflower “pizza crust” which is topped with cabbage slaw with home-made mayo + lemon caper dressing, avocado, and nutritional yeast.

Ugly as it looks, it was one of the best things I ate all weekend.

But then there was this dinner.

It took no time at all and was pretty awesome.

Sriracha Quinoa Sushi Bowl

Ingredients:

  • 3/4 cup uncooked quinoa
  • 2 avocados, diced
  • 1 mango, diced
  • 16 oz crab meat
  • 3 tbsp mayonnaise (I made my own with olive oil)
  • 1 tbsp sriracha (+ more to heat desired)
  • 1/2 lime, juiced
  • salt + pepper

Directions:

Cook quinoa with water as per instructions.  Let cool to room temperature.

In a small bowl whisk together the mayo, sriracha, lime juice, salt & pepper. 

Combine quinoa with crab meat, mango, and sriracha mayo sauce.  Mix well.  Fold in avocado.

Don’t skimp on the avo! 

Notes: For a vegetarian version sub black or cannellini beans for crab.  It won’t taste like a bowl of sushi anymore, but it’ll still be yummy.

    it didn’t hold up like a crust so you need to eat w a fork but heres what i used:

    2 c cauli,”riced”
    1/4 c nooch
    1 oz goat cheese (optional)
    1 egg
    Pinch of salt

    Combine.

    Bake at 450 degrees f for 22 minutes.

    I can’t do nooch or dairy. Would an egg work to hold it together?

    That was for both. I think the egg alone would be enough of a binder but you may try squeezing any liquid out the cauli rice to try and dry it out Bc I used the nooch to soak it up and absorb some of the wetness. Maybe try an egg and chia seed mix?

    Do you find now that your a mom you eat more animal products than before? I love the idea of your sushi bowl, it would be tasty with some toasted wakame snacks on top!

    Oooo, good call on the wakame! That would’ve been a great idea. Next time…

    I have recently added meat back into my diet, but it’s unrelated to being a mom. I’m actually working on a post with more details now (I have been working on it for a couple weeks so who knows when I’ll get it up…). I’m not trying to be coy or hide the fact that I’m no longer a vegan or vegetarian, it just feels like a lot to talk about given how much my blog identity is linked to not eating meat. But I’m not the same person I was when I started this blog and since I’ve evolved so has my diet…anyway…more to come.

    Hi Elise, I have followed your blog for a while and I think that you should be extremely proud of the choices you have made for P’s health as well as your own. I’ve been Vegan for 2 years (vegetarian for 10) and I will continue to follow your blog no matter what ‘category’ of food you and your family eat. You have a wealth of knowledge and I really respect the choices you have had to make with P’s diet. The main goal is proper nutrition and optimal health, no matter what you can or can’t or will or won’t eat. keep up the awesomeness 🙂
