Too much lunch

I’ve come to the conclusion that it’s impossible to make crock-pot meals look appetizing.

The night before photo looks like tomato and almond milk soup.  Gross. 

The next morning photo looks like old crusty cornbread.  Double gross.

What it actually had was:

  • 1 cup corn meal
  • 2 1/2 cups water
  • 1 cup plain almond milk
  • 10 cherry tomatoes (I punctured them with a knife before hand)
  • 1 tbsp grain mustard
  • 1 tsp fresh parsley, chopped
  • pinch salt

Started at midnight…6 hours later…I was still asleep…but it was ready for Kyle.  That’s why half of it is missing in the above photo.  My portion was warm and waiting for me when I got up later though. 

I sprinkled nutritional yeast over it too.  It was lovely.

For lunch, picture this times four because the above is a quarter of a pizza.  I took the whole thing down.  Home-made dough with marinara sauce, nutritional yeast, avocado and more nutritional yeast.

I was so full after this feast.  Even when dinner time rolled around…still full!

FYI, there’s nothing more frustrating than being full when it’s time for another meal.

Finally at 8:30 pm, I was ready for something to eat.

Carrots with a spinach & avocado dip thing.

  • 1/2 small lemon, juiced
  • 1 avocado, mashed
  • 1/4 cup chopped spinach (I used frozen)
  • pinch salt

This meal was small and mighty.  Nutritionally dense, but packed with fiber.  And let’s face it, anything with an entire avocado is gonna be good.

This must have triggered my appetite because I was ready for dessert not long after.

Lots of dark chocolate with candied ginger. 🙂

    So true on crock pot meals, they always look like a wet mess to me but are so amazing. The pizza sounds divine and thanks for reminding me I need to track down more candied ginger, mmmmm!

    hahaha I love reading your posts!! I loved when you said this: “FYI, there’s nothing more frustrating than being full when it’s time for another meal.” I feel the SAME WAY!! Some people are happy because they won’t eat another meal but I honestly cannot wait until I feel hungry again to eat!! I never skip meals :$ x

    That pizza looks incredible. Avocado on anything is the best. Never added it to pizza, but I think that should change asap! I just got a crock pot and could not be more excited for it!

    Dinner looks the best! How can you go wrong with spinach and avocado? I mean, really!! We had Nepalese food for dinner last night in Ventura — Chicken Saagwala, which is basically chicken pieces floating in spinach! Wonderful! Then this morning? Spinach and mushroom omelette! I’m so happy right now!!

    It was actually a Nepalese/Himalayan/Indian restaurant, so who knows what I was eating. But, yes, very similar to Indian food — so very delicious. Asked for mild, and wished I’d asked for a little more heat, but still very, very good! Too bad it’s so far away…

    My hubby had a chicken masala pizza! So that was Indian/Italian! Naan has got to be one of my favorite things on earth!! That’s what his pizza was on.

    naan is in its own category of yum. i used to buy the WF brand all the time in NYC but i havent seen it since moving back to ca. i should definitely look into that…
