I think there’s a misconception about how I eat. For every new recipe I create and share with you guys, there are five others I don’t show because they look like this…
Oatmeal with melty peanut butter, cinnamon, and raisins. Not exactly reinventing the wheel with this one.
I don’t have magic spells that bake cakes while I’m at work (Sleeping Beauty reference anyone?), nor do I have ingenuity oozing from my pores. Especially after 12 hours of nursing.
Simple is fine by me.
So whether it’s oats with the works or white rice with the works, it’s not fancy.
I just want to make sure nobody gets the (wrong) idea that I’ve found a way to clone myself and work full time while making new and exciting things for every meal of the day.
Over the past few days I’ve have toast with avocado & eggs (or some permutation of those three ingredients) for 50% of my meals.
This one was on crispy sourdough.
This one was on my own home-made (and royally effed up) gluten free oat bread.
I stopped taking pics since things were getting pretty repetative, but why mess with perfection right?
Trust me, it aint broke. Unfortunately I can’t say the same about my latest “loaf.”
I wouldn’t call it an epic failure, but it was one of my worst so far.
Flavor wasn’t the issue, texture was.
The inside was good, but the outside crumbled and fell apart. It was like there were two layers – the inner bread part and the outer crust part – and they weren’t even aware that they were the same food.
Kinda reminded me of the inner and outer cortex of the brain. Whoa nerd.
Clearly getting it to rise was the main problem (TWSS), but I’ve read up on gluten free bread baking a LOT since then and I have an idea of what to do next time.
So there you have it. The behind the scenes to HHH. I couldn’t let my laziness and mess-ups go undocumented, right?
What’s your favorite no-muss no-fuss meal? Mine is oats.
Latest kitchen flops? I’ve been experimenting with low FODMAP recipes, which has forced me to stretch my cooking limits. It means big payoffs…or big disasters.
I feel like some of my tastiest dishes are pretty unattractive – I never photograph them for my blog even though I eat them all the time.
MOST of my dishes are terrible. I cannot cook.
Oooh brown meals. I have tried and tried to make potatoes look good, but they rarely do. But they are definitely my go-to easy meal.

Oh the misconceptions behind the title “food blogger.” Having just moved in with new roommates, I often feel sort of awkward when they say “Sooooo what are you cooking tonight?” because inevitably I’m eating a big bowl of veggies and hummus or something I’ve thrown together in a saute pan and then thrown on top of rice or quinoa or something similar. [There is apparently a lot of throwing involved in my cooking?]
Plain and simple is often the best. 🙂
I’ve been eating toast with egg and avocado a ton lately, too. It’s so easy and delicioso.

don’t lie, you know you use your break time to cook up goodies in the hospital kitch 😉
a microwaved sweet potato with hummus and steamed veggies. Haha that’s my super quick go to meal. Last night I had that plus a fried egg. Perfection.

I actually love seeing the simple eats on your blog (and recipes of course, too), because it always gives me so many easy/delicious ideas!!
And I can relate to the fails – I just made a broccoli soup the other day that was just okay. Not worth repeating and definitely not worth sharing!
I can’t get enough of the toast+eggs+avocado combo these days either. I’ve been digging it on that Whole Foods prairie bread 🙂
I feel your pain. I’ve been gluten free before and recall some gluten free oat rolls I tried to make. The outsides were crisp and wonderful……but the insides were crumpet like in appearance and had the texture of Klag glue. I’ve had so many gluten free disasters (so many bread disasters actually) that my poor bread machine sits gathering dust on the top shelf of my pantry.
And as for simple. I’m with you! I can’t eat avocado though, I think I have other food intolerances and it gives me welts on my mouth 🙁 It’s one of my favourite foods too. Egg and avocado on toast sounds awesome *drool*.
I, too eat mostly ugly meals. I don’t know how some food bloggers day all beautiful meals. Seems impossible!
I truly believe that the ugliest meals usually taste the best. At least that’s how it seems to work out in my kitchen!
My go-to meal is steamed veggies and/or kale, plain tofu (yes, I enjoy it plain…weird), and a microwaved sweet potato.
…Or cereal. Cereal never fails me.
I’m not very creative, so most of my meals are really low-mess and not that creative–oats, avocado or sunbutter/banana sandwiches and my go-to (daily) big bowl of brown rice, chickpeas, veggies and Earth Balance. They all kind of go in a rotation with a few other things thrown in. Simple, but delicious.

fried eggs are SO underrated!!
I get the same thing from roommates!!! And its always the same thing just done a little bit different way 😛 Go veggie!
