I didn’t have many meals planned this past week because I went to my parents’ house on Thursday for the whole weekend.
Kyle was busy with work on Tuesday and Thursday (which kept him out late at night) so we celebrated my birthday on Wednesday. We had a simple thing at market, which was SO FUN. The weather was good, the babies were all together, and Kyle got two dozen cupcakes (vegan and gluten free) from The Plum Bakery in Sac which were delicious.
Look at the height of that frosting! It was a really awesome birthday.
So anyway.
Kyle’s been begging for stroganoff for a while now, so I finally made it.
I used this recipe but added ground turkey for P. It tasted exponentially better than it looks. We had it with quinoa.
For Tuesday, Kyle was gone so I made roasted veggies (chard from the garden up top, with carrots and sweet potatoes below) to pair with a hemp seed “gravy” but I didn’t like the flavor of the gravy at all…and I felt kinda blah…so I ended up eating scrambled eggs with marinara and veggies instead.
This ended up not being enough food at all and since I felt so off all night I wound up skipping dessert (SO not like me) and then waking up with all sorts of stomach pain in the middle of the night. It was a weird night. I think I had too many veggies over the course of the day or something. I had a massive serving of kale for lunch and some of the chard “chips” that I roasted so combined with the carrots and sweet potatoes I must have done my gut in.
The next day I got my favorite sushi (love MERMAID!) on the way home from market. As many know, I have a textual relationship with them so I got a free roll on my birthday. Weee!
I don’t have pics of the taco salad I ate at my parents’ house on Thursday but it was awesome.
On Friday I got together with one of my besties in the AM and in the afternoon I took P to a new park and then we went trick or treating downtown. My hometown is getting super cool all of a sudden!
P wore this old costume (super hero cape) that my mom and I found in the Halloween crap in the rafters. I wore it when I was a babe, so it was neat seeing him in it.
For dinner we had leftover vegetarian curry with chickpeas and cauli that my dad had made earlier in the week.
The next morning we went to brunch with my fam and met up with friends. La Boulange, of course.
We also took P to another park when there was a break in the rain.
And then that night we celebrated my birthday and my mom made cake. We used a Betty Crocker GF mix and made the frosting with coconut cream/cocoa/powdered sugar. Mmmmm.
Now we are back in Davis and it’s 100% fall. I love it.
