Playing catch up here…with last week’s meals.
Actually, the first dish got bumped to this week because it never happened. Also, I made the pan fried tenders with rice and salad on a night Kyle was out of town and for some reason didn’t take a pic. I also forgot to take pics of the Asian noodles, too (!!), which is ridiculous because I made two massive batches, which we ate as leftovers throughout the week (the other batch went to a new mom). Multiple opportunities to photograph, but still escaped the camera. Meh. So given that, here are just a few dinner ideas if you’re looking.
This is Jessica’s BBQ chicken chili via skinnytaste. I used pinto and cannellini beans and omitted the jalapeño and it was plenty hot. P ate a few beans but mostly stuck to the chicken. Baby steps.
Salmon and broccoli with quinoa. I made a simple marinade for the fish with miso paste, maple syrup, soy sauce, and brown rice vinegar. It was bomb. P got a plain filet, which he devoured. He freakin loves salmon. He also loves broccoli and quinoa. This meal was a massive win for the fam.
This is what we ate instead of the skillet quinoa, sausage and kale dish. We were out late at a football game and by the time we got home it was burgers, peas, and leftover quinoa for the win. I added avo to mine but Kyle didn’t want it. Weirdo.
Here was another random quickie that I threw together over the weekend (that wasn’t on the menu). I was reallllly craving sushi but didn’t want to cave and spend the $$$ so I made a deconstructed version instead. Brown rice, topped in avo, baked chicken and copious amounts of tamari (Kyle had teriyaki sauce instead). It works.
Breakfasts are so routine it’s not even worth posting, because seriously. Eggs, avo, and some kind of carb.
Oh look! I deviated! I did a fair amount of baking last weekend – lots of pumpkin involvement. And in addition to the granola and (failed) cookies you see on the right, that’s a baked pumpkin oatmeal thingy way in the back there. It was good but not very sweet at all. I was making it for P and I to share so his taste buds were fine with it but mine felt gypped.
The flattened failed cookies were still delicious in case you were wondering. Kyle had no issues making “cookie bowls” and devouring them because it meant serving sizes were basically nonexistent.
