The weekly menu

I took two trips to Costco this past week which was definitely two more than I wanted (why I grocery shopping there so annoying?).  Anyway, in spite of that, we still seemed to have no food in the house which was especially odd.  For the record, one of the Costco trips was to buy all the food for our Trinity trip…which was a huge success food-wise thanks to our amazing friends and their compassion and empathy when it comes to P’s allergies.  The menu was simple but delicious and I can guarantee nobody starved.   😉

Ok but back to the weekly menu.

This was the cold veggie noodle dish I made in bulk.  It lasted me 4 lunches because I jazzed it up with different things each day – like avo and roasted squash and greens and the likes.

For dinners, I had the chalkboard to reference.

It’s missing a day because we were in Trinity.

BBQ chicken and broccoli with red quinoa.

I made the chicken in the oven, low and slow so it would shred easily, then I added the BBQ sauce after to Kyle and my portion.  P ate his chicken plain.  He also ate both the broccoli and the quinoa.

Very filling meal.  I hope P tolerates soy some day because I can image this being good with tempeh.

Potatoes with the works didn’t exactly happen because I forgot to buy potatoes!  So we just had all the same toppings over rice.  Kinda weird, but whatever.  There’s bell peppers, corn, vegetarian baked beans, goat cheddar, and goat kefir in there.  And P ate all the components as well, including the beans!  I am having more and more success with pacman eating beans and it’s making me so excited.  He’s also obsessed with bell peppers lately.  [Side note: I recently tested flax seeds and pepitas over the past month with success!  Hooray for more safe seeds!]

We ended up skipping market on Wednesday because I was exhausted and Kyle wasn’t going to be able to make it anyway, so we ate at home.  I had tri-tip in the freezer which I thawed and roasted in the oven.  Paired it with a bomb spinach salad (mmm…avo) with a home-made vinaigrette that hit the spot.  Pretty decent for a last minute meal.

BLTs with avo.  Simple enough.  Mine was less attractive because I had GF bread and since it’s small I made three mini open faced BLTs instead of one normal one.  P gobbles bacon up like it’s his last meal on Earth so we all know how he liked this meal.

The Asian noodles didn’t happen because we had leftovers to polish off.  So that’s the week in food!
