I went big with Sunday prep this weekend (we’ve been out of town or busy the past several weekends that I’ve been doing it mid-week during nap times, but I way prefer getting a ton of stuff done before Monday hits).
That’s brown rice in the rice cooker, turkey lentil bites in mini muffin form, roasted butternut squash, and bacon.
I froze most of these after they cooled and P has already eaten almost all the ones I didn’t freeze. Highly rec this recipe for toddlers.
Unpictured: a huge veggie and salmon cold pasta dish for me to nibble on throughout the week.

DIjon chicken with peas and brown rice (just mixed dijon and stone ground mustard, goat’s milk plain yogurt, and herbs for the sauce).
His is on the left (2 cheese, red onion, chicken) and mine is on the right (zucchini, daiya, and extra zucchini fries). Despite the fact that mine looks huuuuuge, it was the same amount of dough (I cheated and bought it from TJs because I couldn’t be bothered to make it even though it’s soooo easy). My pizza was better, obvs. Because zucchini is the ish.
I used this slow cooker recipe (again) but added potatoes and onion because last time it was soooo rich I thought it may work as a stew of sorts. I was right and think next time I’ll add in carrots and other veggies and just cook it longer. More veggies is always better.
I used this recipe for tortilla soup but used chicken instead of tofu. P ate both of these soups (minus the chips we added to ours). He’s iffy on spices at first but frequently realizes he likes them. But he still prefers the deconstructed version of the meal more (because I usually feed him the ingredients as his dinner while I prepare it). But his palate is definitely expanding. He eats most beans now (black, pinto, etc.) which is a huge win and reason why we’ve been leaning back to more veg heavy ways (although you wouldn’t know it by the meals I’m showing here, ha!).
I guess I forgot to take pics of the Caesar, but it’s fine because I ended up using romaine instead of kale so it’s just a normal looking Caesar (not too thrilling of a photo).
And since my sister will be bored if I don’t show people pics, here’s my brunch fare (eggs benedict with avo and potato hash) and two handsome dates from Saturday (we walked to Crepeville and then hit up the farmer’s market).
