Name a better combo than nuts and cheese. I’ll wait.
In the world of me, there isn’t one.
Which is probably why I am so obsessed with grain bowls. They are like an endless opportunity for different nut and cheese options based on what you’re in the mood for!
You have grains and greens are the base, and from there it’s a choose-your-own kind of adventure!
This week’s combo was kale and farro with my beloved lemon miso vinaigrette, plus Meredith sheep and goat milk cheese, candied pecans, slivered almonds, and dried cranberries. Heaven!
Usually I make enough for several days of lunches, but because I had gone to Trader Joe’s over the weekend I had other salad options at my disposal.
I have been craving this salad for a while! I used to get them all the time, but then I stopped going to TJs on a regular basis and was really trying to keep my plastic consumption down. I’m not saying I’m giving those waste goals up, but there is a certain amount of balance that seems important to keep my sanity in check.
Last week was busy and I knew this week was going to be more of the same and so I splurged a bit on myself knowing it would make me happy to have yummy food that was ready to go without much prep.
If you haven’t tried this broccoli slaw and kale salad I cannot say enough amazing things about it!
The next day it was back to the grain bowl…
This one had all the same stuff but I swapped in leftover brown rice that I already had in the fridge.
And now, without any further ado, I present the salad of the week!
Normally I wouldn’t post something like this because, well, frankly, I rarely make things using exclusively store-bought items, rather than things I prepped on my own. But then it occurred to me that maybe you, too, want to know how to make a super fast salad using all TJs products for those times when you can’t bust out a hour of kitchen labor over the weekend. Or during naps. Or whenever you typically meal prep.
So here it goes.
1. Cruciferous crunch collection (has a mix of kale, shaved Brussels, broccoli slaw, cabbage, etc).
2. Organic toasted sesame dressing (sesame and miso umami flavor)
3. Grilled chicken strips (already cooked, seasoned and cut)
4. Sliced honey roasted almonds (adding that sweet crunchy factor)
5. Avocado
Massage the greens with the dressing. Add the chicken, avo, and nuts and dig in. SO EASY EVEN A BUSY PARENT CAN DO IT.
