After the long work weekend, I was looking forward to sleeping in on Monday, but my internal clock didn’t get the memo. Instead I embraced it and got to work on my day’s tasks.
After coffee #3, I turned to some grub.
Protein pancakes are all the rage right now…and I had to see what all the fuss was about.
I’m not sure where this trend actually started, I seem to see them multiple times a day on various blogs, so to whoever coined the recipe first, I tip my hat to you. The stats are definitely noteworthy, however, to be honest the texture was a bit weird. I may be to blame for that, since I changed the recipe to an egg-less version, which likely affected the way they cooked. Regardless, I’m not hatin’ – the texture grew on me and in the end I licked my plate.
Naturally, my version was altered a bit…
These were the stars of the show (cocoa powder and brown rice flour).
Along with (thawed) frozen berries, NuNaturals stevia, baking powder, baking soda, and 365 brand vanilla protein powder. I also ended up adding a few spoonfuls of plain greek yogurt because the consistency needed a bit more.
The best part of all was I got to test out a new kitchen appliance that I got in the mail the other day from Lamson & Goodnow.
This company is powdered ENTIRELY from hydroelectric energy generated on their grounds using the Deerfield River that runs through it (environmentally friendly products – hollerrrr). Also, the GoodNow features 100% post consumer recycled paper and 90% post consumer recycled steel, it has petroleum free resins, it is colored with organic pigments, resists staining and melting, and is dishwasher safe.
As a girl who has only ever had cheap, ghetto plastic spatulas (that melt and peel off plastic in your food – ew), I was SOOOO excited to try a fancy one. I felt like a real chef…and an Earth friendly one at that!
Can you tell how thin the metal parts are? Perfect! And the best part is how you can rest it on the counter and the metal part doesn’t touch the counter! No need to dirty a plate to rest the GoodNow on while cooking.
The turned up lip at the end and the super slim metal made it really simple to use! All my pancakes were flipped to perfection. In short, I am a convert. Thank you Lamson & GoodNow!
My fave part of all is when the berries swirl in with the batter. It’s so pretty!

The first one was a throw away not so attractive…but still tasted good.
Eventually I got a nice steaming stack, and I was ready to dive in 🙂
I went back for seconds and thirds, and ended up polishing off 8 (EIGHT!!!) pancakes in total.
I added extra berries on top. Let the record show:
Pancakes + cocoa + berries = ‘Gasmic
And due to the massive quantity I downed (coupled with the protein content) I was full for HOURS. I did several errands, hit up the gym, showered, and was still satisfied. Crazy!
Eventually I made an early dinner of grilled simple seitan, steamed peas and sweet potato.
I covered it all in hummus, BBQ sauce, and nooch. Shocker.
Since dinner was early I had another meal later on.
While my cereal was left to soggify, I crunched through my first apple of the day.
Around 11 pm I decided that I “needed” dessert. For the record, I was in no way hungry, but I was seriously craving dates and carob chips…and so this happened.
This sugar mountain shall hereafter be referred to as the promise land. My taste buds were loving it until about half way through. That’s when I hit a wall and I started to feel pretty sick. Normally I can power through a bag of carob chips or twenty pounds of medjools without thinking twice, but for some reason all the sweets really got to me. This should have been the red flag that it was time to stop eating, but oddly enough, I ignored everything my body was trying to tell me and forged ahead (this is actually fairly unlike me, as I am usually very responsive to signs of fullness). Either way, finishing dessert was a bad idea. In the end, I went to bed miserable and uncomfortable. Not the happy ending you hoped for huh? Oh well, not every day is a winner.
Hmm I am not very good at stopping when I am full when it comes to sweets. I say as I have a batch of cookies about to go in the oven…
I am however a big fan of soggy cereal and a bigger fan of peas – you just reminded me I have a ton to eat!
Sweet food = no stopping. I don’t think I truck could stop me from finishing off a sweet treat sitting right in front of me. Especially when I already made it through the first half. I think I’ve eaten like ten sweet treats that I wasn’t the least bit hungry for over the last few days. It happens!
So many posts to catch up on–yay! I can SO relate to the not stopping eating in the middle of a sweet treat…especially with the orgasmic deliciousness that is/are medjool dates. It happens sometimes, but try not to beat yourself up…that only makes ya feel worse. Believe me, I speak from LOTS of over-eating experience and am wise beyond my years when it comes to this topic, unfortunately… 😉

I sometimes overdo it right before bed, too, but I always wake up feeling OK. On to the next delicious meal!

Those protein pancakes look tasty – I love berries cooked into pancakes, so delish. I am a big evening over-eater, I find sometimes one snack makes me hungrier and eat more – have been trying to curb that because I hate feeling stuffed before bed, but I also never go to bed hungry because I feel starving in the AM!

Eating dates to the point of a painfully full stomach is like a daily thing for me! The tummy says no but the taste buds can’t resist ’em
i agree, if youre gonna have something like pancakes, its best to just DO tha damn thang…which is why i ultimately just made normal pancakes with the brown rice flour and added in a scoop of pro powder just to see how it tasted with the vanilla flave. it was fine, but not something ill be making on the daily. i guess im just not falling for the protein hype either.

im allllll about the soggy cereal. sometimes i even add extra and put it in the micro to further mushify it 🙂

im the same way…my appetite doesnt seem to hit its stride until the afternoon and then by the evening im ready to go to town. i hate being full and trying to sleep but theres NO WAY i can fall asleep if im still hungry. basically, its a constant battle trying to find the middle ground.
i thought of you when i pounded my own weight in dates…not sure if thats a compliment or not…we are “special” after all
