We got back from Tahoe and I haven’t found the time to go shopping because Kyle’s out of town so we are living off the freezer and pantry.
It’s fine. I’m fine. We are all fine.
Fancy stuff going on over here…
Luckily I have alllll of this chocolate (and more!) to keep me fulfilled in a different way.
I will make it to the store eventually, but I still have so many old meals to catch up on posting anyway.
Like these two meals from Run Fast Cook Fast Eat Slow.
First I made the Thai quinoa salad, which is always such a hit that I now know to double it every time I make it in order to have leftovers.
I served it with different proteins (meatballs/edamame/steak) because they were all leftovers.
Which kid do you think wanted steak and which wanted edamame?
The other RFCFES recipe I made was the superfoods soup.
I used butternut squash instead of sweet potatoes because it’s what I had (this meal is definitely mainly household staples).
It was a huge hit with the kids – although it needed a bit more salt for my liking. Maybe next time I’d use broth or stock in place of water. Or deglaze the alliums with some wine before adding the rest of the veggies? Anyway, it was a nice warming soup that was perfect after a long chilly day of outside play.
I need to keep cooking more recipes in this cookbook, because I love them all so much and yet I tend to keep remaking the same handful that I’ve made in the past because they are so good.
So, it looks like I need to get back to meal planning so I can get grocery shopping…is this the never-ending battle of your life too?
Prolonging a shopping trip forces me to clean out fridge and use up what I have on hand.
