I used this recipe but halved it and made a few changes: I used coconut oil in place of butter, coconut sugar in place of brown sugar, subbed 3/4 cup steel cut oats for some of the rolled oats and used a mix of all purpose GF flour and oat flour instead of wheat flour. Kyle got one cookie but I ate the rest. In the words of cookie monster, nom nom nom nom nom.
I also have a serious Asian thing going on with my taste buds right now. On the left is fried rice leftovers, and on the right are TJ’s veggie potstickers. I am slightly embarrassed by how much I love them. I don’t usually give in to compulsive desires in the freezer aisle, but what can I say? Shopping hungry is never wise especially when TJs is dialed in like they are.
I made a pancit of sorts with shrimp and in the process discovered that P is OBSESSED with shrimp. It’s his new favorite protein and he requests it at every single meal now. He likes it plain (thawed) from the freezer. This kid is something else I tell you.
Leftovers for lunch with a fried egg.
Salmon baked with onion and lemon and olive oil. Paired with brown rice and broccoli. Simple enough.
Kyle has been begging so I finally gave in and made Jessica’s chopped BLT salad again.
Crock pot for the win (chicken and potatoes and onions that melted in your mouth thanks to the slow cook).
Massaged kale salad with a Costco veggie burger on top. I ended up having a second burger too.
Did you know it’s spaghetti squash season? Yup! And I couldn’t be more stoked. P likes it too. I basically just top mine with heaps of nooch and call it a day. That’s been my lunch of choice lately.
This pasta salad has been on my mind for a while. I used GF pasta and baked the chicken plain first, but otherwise stuck to the recipe and found it to be even better as leftovers throughout the week.
I’ve made this Bon Appetit spiced fava bean soup before, and I still recommend it big time.

I followed the directions on the marshmallow bag for this and then added some chopped chocolate on top and melted it a bit to spread it out.
