The good and the bad

This week has been yet another classic week of 2020…good news sandwiched by bad news…

Some of the good news was that I made a massive bowl of my fave grain salad so my lunches were both delicious and already made.

Also, we managed to escape to Lake Tahoe for the weekend.

It was SUCH A MAJOR WIN for the family. We were finally able to go outside (the AQI was improved but still not great) and the kids got a much needed change of scenery. We all soaked up every second of the getaway.

But back to the real world.

School has been getting better and better each day. The teachers are doing AMAZING and any fears I had about them not learning this way or being able to focus or tolerate such extensive screen time are completely erased.

It’s still 100% insanity for me, as a tech supervisor, bouncing back and forth between the two of them for hoursssss without a second to myself.

But I am getting used to it and – dare I say it – learning to get a few things done in the meantime! By next week I will be crushing through…ok, ok, I won’t get too optimistic.

Another bit of good news is that our yard is getting SO CLOSE!

Unnnnnfortunately, we can’t actually leave the house because of the poor air quality. The fires are getting more contained every day, but the air is still sh!t and P has asthma, so I really can’t risk it on account of that whole pandemic thing. You know, the one that literally turns healthy lungs into used tires.

Oh also, Breonna Taylor’s murderers are still walking free.

And I don’t even want to touch our nation’s political situation here because I overanalyze it 24/7 as is. %^&#*@!

So how are any parents going grocery shopping with their kids being home all the time? I got a Whole Foods grocery delivery so that worked out nicely but am I going to do that every week? Kyle’s leaving town next week so I guess the answer is yes.

As you can see, we’ve been eating well enough. I realized I need to be HIGHLY organized with all that we have going on right now. Winging it isn’t an option with distance learning. By 6 pm, I am SO FREAKIN’ EXHAUSTED, but I know that if I don’t make breakfast for the next day or pre-pack lunches or prep food in advance, things will start to derail.

As we all know, lists are my friend. So let’s hope I can keep this (moderately organized) train on track.

Side note: the secret to this meatloaf being amazingly moist was the shredded zucchini.

It also had 1 lb ground pork, 1 lb ground beef, 1/4 cup quinoa flakes, and a bunch of herbs and spices (oregano, dried onion, dried garlic, parsley, basil, thyme, celery salt, and pepper).

Have you tried these jicama wraps from TJs yet?

We all LOVED them! And they are the perfect thickness. Durable enough to hold taco stuffings and yet, thin enough to bend and bite into like a proper tortilla. The kids are already begging for me to get more (which won’t happen for another three months given that my TJs shopping cycle is approximately 90 days apart).

We are all just doing our best!

And since we are discussing new products…BEYOND SAUSAGE!

I didn’t know what to expect but had heard several good reviews and WOW were they right. It’s really really good.

Unfortunately, it’s also really really expensive. Who wants to pay $10 for four sausages?! That’s not enough to feed a family and it’s far more than I’d spend on organic meat sausages. They are going to have to sort out the pricing because as much as I loved it, I can’t see it being a regular item on our shopping list. Have you tried it?

While the oven was on, I just went ahead and roasted a bunch of stuff.

    Does any grocery store near you do store pick-up? You order online, pick a one-hour time slot, pull up, call them, and they bring the bags out and load them in your trunk and you don’t even have to get out of the car (so you could bring your kids, if you scheduled it for after-school hours or on weekends). Cheaper than delivery.

    I hope my grocery store keeps doing it post-pandemic since I hate grocery shopping… it’s pretty sweet – lol.

    Hmmmm…worth looking in to!? I think Target does, but not for groceries. Maybe Safeway?! I never shop there and always forget about it, but that’s a great idea that I will now be googling stat.

    Alright. Skies here are gray. (Idaho). AQI is OK. Allergies plus smoke is doing great things to my airway. Some small fires that are under control (knock on wood it stays that way). Here is a virtual hug for you, supermom. Thanks for the tip on shredded zucchini in the meatloaf!!
