The every-day eats

I am bad about taking pics of my daily eats (like I used to) but I get requests for them more than the “real” recipes…so here are  bunch of the quickie things I throw together on the regular.  From last week…

Millet with sautéed spinach, baked tofu & avocado

I made the millet in the rice cooker, sautéed the spinach with sesame oil and tamari, and used Wildwood tofu.

I also re-made this salmon pasta, but in a HUUUUGE vat.

Lots of veggies to use up?  Throw them in!  I used the same truRoots GF pasta.

Nachos with tomatoes, avocado, Daiya provolone slices (trying to use them up), and a fried egg.  Fancy fancy!

Open faced sandos on toasted GF bread topped with an avocado & hard boiled egg mash and herbed goat cheese.  Carrots on the side.

Peanut shrimp with steamed spinach and brown rice.  The sauce is made from peanut butter, rice vinegar, tamari, and maple syrup.

Hard boiled eggs mixed with herbed goat cheese and scooped up with riceworks chips.  Carrots on the side.

Those chips are awesome btw.  I got them at Costco – I’ve had the original (sea salt?) flavor before and liked it too.  I recommend this wild rice flavor for the record.

Kelp noodles with avocado / nutritional yeast / green sauce.

For the sauce, I used 1 whole avocado, 1/3 cup nooch, 1/3 cup plain almond milk, 1 large fist of greens, and a pinch of salt.  I sprinkled extra nooch on top and lemme say, it was WAY too rich.  I couldn’t even finish it.

I set it to cook overnight and then I added almond milk and peanut butter in the morning.

When I wasn’t banana bread-ing, I was pancake-ing.

Suuuuper obsessed right now.  I got this bag at Costco and haven’t been able to stop.

Al fresco Saturday evening.  Mary’s Gone crackers, Milton’s crackers, Redwood Hill Farms smoked goat cheddar, grapes, smoked salmon, and maple glazed almonds.  Lambrusco on the side.

Candied ginger, Equal Exchange chocolate, The Lovely Candy Co. toffee, and dried coconut meat.

I suck at moderation so what you see may only be a portion of what I actually ate.  I often go back for extra handfuls of chips and carrots at the end of each meal.  And I don’t take pics of many mid day sweets.  I’m trying to decide if taking pics will hold me more accountable or just be more annoying.  I don’t usually care, but lately the haphazard grazing has me frustrated.  Night shift to blame?

    I love this post! It’s funny because I just ate before I read this and now I’m hungry again! So many great meal ideas! I’m such a creature of habit… I pretty much eat the same things everyday.     I am looooving wildwood’s baked tofu right now. I also like taking pictures of my daily eats, but i have always neglected to picture the handfuls of pretzles and pumpkin seeds I eat throughout the day. Now, I’m trying not to snack. Your meals look yummy! I’m gonna have to do the tofu + quinoa + spinach bowl. looks awesome

    YES. Just yes, to all of this.
    When it comes to food I’m legit a Queen of indecisiveness, and over-complication. Posts like this help calm my rampant, ADD, foodie mind a little :p.
    And we have such similar ( fabulous, duh) tastes too.

    I hear ya on the moderation. I guess night shift/ sleep deprivation could definitely be a culprit…oh, and the fact that food is just so darn delicious & you only live once. Maybe that too :).

    I always love these posts! Your delicious real food meals are very accesible and i always am inspired after reading these. The peanut sauce sounds awesome, so does the green sauce with nooch. And i am a super huge fan of lambrusco!! Good stuff.

    Unless the random snacks and grazing makes you feel crappy then who cares?? I’m sure your body is just looking for energy.

    I have never left a comment in my life so I am hoping you can answer my question…..Do you eat fruit? I see alot of your snacks are lara bars, banana chips, nuts, etc., but then you eat alot of bread for breakfast. Both fruit and bread hurt my stomach even though they are fodmap foods. Does fruit hurt your stomach?

    If you listen closely you can hear hummus crying in the background for beign left out, or at least sabra’s wallet! (I kid) Do you still include it as much or are you a little over it,or has some recall happened that I totally missed? Because Lord knows, I do not pay attention to the news!

    I still heart the way you eat so much! You eat pretty similar to myself (pescetarian too :)) and I have recently fallen back in love with avocados (I know how could I have disliked them?).

    I remember a while a go you saying you were trying to cut back on the sugar? I need to do this. In the UK we have these bars called ‘nakd bars’ (Basically larabars) and oh my do I chow through them!!
