I made a major mistake and didn’t say decaf when I ordered this (venti soy misto) before we hit the road to come home from NorCal.
I was very perky! I hope P didn’t get as high as I did off the caffeine! Oops!!
The rest of the road trip was similar to the first one – Kyle and I traded off driving duties and our little man slept 99% of the time.
I packed up our eats again. Similar as always.
Brown rice, half an avocado, & two hard boiled eggs with a nooch based sauce on top. Then I piled a ton of greens on top. Sadly, I forgot to pack a fork and knife so I was stuck manipulating my savory breakfast salad with a spoon. Not so easy.
I made it work.
Kyle had a hummus, avo, and egg sandwich for breakfast.
And a PB&J for lunch.
Before I didn’t care where we stopped for gas since I packed our food, but now I’m learning all the best stops along the I-5 in terms of changing tables and breast feeding privacy. Oh life.
I had leftover Patxis pizza for lunch. The dough/crust wasn’t thick enough to eat while I was driving so I had a delayed meal at 2 pm once we switched jobs.
My appetite was kinda insane though so I had a pound of trail mix afterwards, in addition to a strawberry Kombucha.
I like most of the other berry flavors better – like trilogy and gingerberry.
After we got home I was going stir crazy, so I set off on a short run. I had my 6 week check up the next day, so I figured it was harmless. I was slow, but whatever. Truth be told this wasn’t my first post-partum run. I snuck in a couple of other ones before, and most went well, but afterwards I felt a little iffy about how it was affecting my healing.
I didn’t want to do much for dinner so I made penne with marinara for Kyle and soup for myself.
Can you see the little chik’n breast sticking out the corner? That’s a gardein (frozen) chick’n scallopini breast.
It looks like this after it’s been thawed. There’s not much in the way of seasoning on it, so I chopped it up to bulk up the soup.
My mom made this soup for herself when I was home and I thought it looked so good so I picked up a box. It is good! I also added in Mary’s Gone Pretzels (a freebie from Expo West). I’m not sure how these can be called pretzels since they in no way resemble the salty snack. They are basically stick forms of Mary’s crackers (which I love). I’m not so keen on the chipotle tomato flavor though. At times it was absent altogether, and then randomly I’d get really spicy bites. I didn’t really like them much on their own, but in the soup (and with hummus) they are good. I guess that just makes them carb vehicles though. Whatever.
I was up all night again since P slept the whole car ride.
Too bad the next day was jam packed and not restful. Kyle and I went to the MD for my 6 week post partum follow up and stayed on campus for the next few hours.
For breakfast I scraped every last bit of almond butter out of the jar and then used cashew nilla butter to cover the rest of the toast.
I caved and bought Whole Foods’ gluten free bread last week. I’m trying to savor it and eat it extra slow so it lasts as long as possible.
I had a meeting scheduled with my nurse manager after my appointment and then Kyle and I had a lunch date on campus after that. I brought trail mix to snack on, a Clif bar for Kyle, and lunches for us both.
Kyle got leftover pasta from the previous night and I made a big salad with romaine, mixed veggies, daiya cheese, and a fried egg (I had a small tupperware of dressing on the side). I also had another Mary’s Gone sample from Expo.
This is the new “super seed” flavor, but to be honest, the crackers taste the exact same as the original flavor. You can see poppy seeds in them, but otherwise they don’t look or taste any different to me. I like them though because I like the original flavor.
My meeting with my boss was great. I’m really happy about the outcome and feel so lucky to work at such an awesome and supportive place. More on that later though. Since it had been a few hours, P was hungry so I went to the hospital’s nursing room to feed him.
After that we met up with our friend for lunch (ate our pre-packed meals) and eventually headed home. I was totally pooped by the time we got back.
I rested a bit, made a snack (peanut butter mixed with almond milk, frozen banana, and granola), and then mustered up the energy to go on a walk.
Before our walk, I started some quinoa so I could make veggie burgers for dinner. I don’t have any great photos of them all plated up, but since there are leftovers I’ll get a better one next time we eat them. And then I’ll share the recipe.
I had this awesome-ness for dessert. Did anyone else know this existed???
OH YEA! This is fantastic stuff by the way. It’s tangy with vanilla flavor and then has flecks of chocolate throughout. Yummmm.
And since I feel bad signing off without a kiddo photo, here you guys go.

I totally agree with you that strawberry is not the best flavor at all. Have you had passionberry? That’s my favorite.

I have only tried 2 of the kombucha flavors but so far lavender is my favorite! I love all your healthy road trip food! I normally pack my own snacks but its simple like carrots and pb&j nothing fancy like egg sandwiches and breakfast salads.
I love that flavor of Chobani too! I made a chocolate-banana frozen yogurt with it last summer–delish!
I love Mary’s Gone Crackers but I tried the wanna-be pretzels one time and yuck, yuck, yuck.

its a blessing and a curse lara…he (usually) falls asleep the second he gets int he car seat/stroller. on a 6+ hour car ride, thats a good thing…until later that night, when he’s wide awake all. night. long.
he doesnt have much of a schedule yet, but he does seem to respond to darkness meaning sleepy time. or maybe its all in my head. who knows. i realize though, that i am very lucky thats he generally sleeps well through the night. soon we are going to convert to the crib in the nursery (as opposed to the pack n play in our room).
