The daily unpictured

When you have pears about to turn into mush…you let them turn into mush in some steel cut oats. With cardamom and vanilla and coconut milk. It was a pretty dreamy breakfast.

Lunch was Thai themed with the last bit of my Nugget sesame dressing, leftover roasted root veggies, kale and leaf lettuce, salty almonds, avo and cilantro. Then I added a bunch of kettle Korean BBQ chips for extra crunch which was the best topping ever. The kids saw me eating them and asked for some too, so I gave them some thinking they may not be into the spices, but I was wrong. They loved them and now I will have to hide when I’m eating kettle chips.

Dinnerrrrr time.

Our UC Davis student farm CSA has been giving us spaghetti squash every week and I am not mad about it. Instead of stuffing it with a basil pesto, this time I made a sun dried tomato pesto. I guess using the word “pesto” is a bit liberal here. There was neither basil nor pine nuts nor cheese…sooo…vegan tomato tapenade? Nope, that’s made with olives I think. Ok, so it was a walnut and dried tomato sauce.

I used both the sun dried tomatoes as well as the flavorful oil they were packed in and blended them with half raw walnuts and half (leftover) toasted walnuts. Plus a generous pinch of salt.

It was SO delicious.

Stuffed into some squash noodles for a cozy Winter night.

Sweet end to the day.

In order for this to be accurate, I should note that what wasn’t photographed included two coffees with chocolate almond milk, many more chips and carrots, a kombucha and another few bites of chocolate. That’s pretty standard for my daily unpictured items…although sometimes I miss any and all snacks entirely (kale chips, roasted nuts, green juice, etc.). Hopefully nobody cares about those. I try to take photos if it’s something new or something I love, but otherwise I tend to omit the non-meals.

    Just wanted to pop in and let you know I made the All Against Grain Curry Chicken Salad last night and we really enjoyed it! It was something completely different to what I usually make, but we’ll definitely keep in in the rotation 🙂 So thanks for the inspiration!!

    So funny, I didn’t buy those chips myself because i was worried they would be too spicy!
    Spaghetti squash dinner sounds great, I don’t buy it that often cuz i seem to eat it and get full yet am hungry an hour later. The walnuts would definitely help avoid that, such a good idea with the sun dried tomatoes

    I kinda like that you can eat and feel full and then you have plenty of room for dessert later 😉
