Tempeh is…hearty, nutty, and packs your meal with oomph.
And it’s ridiculously simple to sub in your regular recipes in place of meat.
Like instead of ground beef in tacos. Or Bolognese in lasagna. Or chicken in a wrap. Or tuna in a sandwich. Or meat in a stew. You get the idea…it’s a very versatile food.
Belly warming. Heart healthy. It’s tempeh time!
Tempeh, corn & rice
[vegan, gluten free]
Ingredients:
- 1 block tempeh (I used LightLife)
- 3/4 cup corn
- 1/2 tsp dried cilantro
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
- 1 tsp lime juice
- salt and pepper (to taste)
Directions:
Boil ~1 1/2 cups water. Cut tempeh block into bite sized chunks. Add to water. Reduce heat and wait for tempeh to softens a bit.
Add spices and let the tempeh simmer on low. Leave the top of the pot off so the water can evaporate. Once the liquid has reduced quite a bit add the corn.
Feel free to crumble some of the tempeh chunks. I like the consistency to be a mix of crumbly and chunky.
Once the liquid has reduced to almost nothing it’s ready. Serve over a bed of rice.
The extra juices will only enhance the rice.
I had it with a side of baked butternut squash too.
This recipe is really clean, but when I drizzled a little olive oil on the butternut squash my taste buds were so very very happy. Olive oil is good stuff.
So is tempeh.

I have never tried it, but I am definitely going to now. You can’t go wrong on the butter nut squash. I love to have that with cayenne pepper sauce. I feel satisfied and great when I am done.
I’m not a huge corn fan, but I might sub some black beans in there to keep with the mexican theme

does boiling it cook off some of that bitter flavor it naturally has?
every. single. time. i buy tempeh i end up throwing it away. i don’t know why, I don’t intentionally avoid it; i quite like it, in fact. i just never get around to actually cooking it…

I love tempeh! I think for a lot of people it’s an acquired taste, but I love the little bitterness it has. And, like you said, it’s SO versatile. Lately I’ve been marinating it BBQ sauce and then adding it to sandwiches, rice/veggie bowls, or eating them like BBQ “wings”. So simple and delicious!
what is in tempeh? i’ve seen it at the store but never stopped by to look. that’s great it can be so versatile! i’m trying to cut red meat out of my life (which, really i already kinda have), but i’m still doing the chicken and ground turkey thing once in a while. that was a lot of babble about nothing! darn my night shift brain 🙂
I always buy tempeh at Trader Joes, its really great and less than $2! They only have one “flavor”, otherwise at whole foods for twice as much $$ you can get lightlife, they have different flavors, i like the one with seaweed…. Be sure to try the tempeh salad recipe! You will be hooked…..
ive never tried the TJs one but ive heard good things about it…i usually buy the lightlife brand (available at WF or safeway). both are organic. i use the flax one most of the time, but i used the wild rice in this recipe. i use the smokey one a lot in sandwiches as faux bacon.

in my opinion it always has a bit of bitterness, but steaming it or boiling it in water first does help a lot.
