Almond Curry Sautee

Oops!  I nearly deleted these pics before I realized I never shared the recipe with you guys!  Sorry for this long overdue post from a meal that I made two weeks ago. I always forget to use almond butter in savory meals because for some weird reason I associate it with sweet dishes.  Probably because I prefer sweet dishes.  Especially in my morning oats, which is when I most frequently reach for nut butters in general. Not this time! My parents were out for the evening (because they have a better social life than I… Read more >

Super simple granola

Yesterday I promised you quite a few posts… This one probably whet your appetite the most.  And rightfully so. I’ve already perfected quinoa granola before, so how does this one differ?  Well, it’s lighter for one.  The ingredients list is shorter, too. Granola is awesome.  You just raid your pantry, throw everything in a bowl, and the rest sorts itself out in the oven.  Or you could follow this recipe… Sweet almond and quinoa granola Ingredients: 2 cup whole rolled oats 1 cup quinoa (uncooked) 1 cup almonds, slivered 1/2 cup dried cranberries 1/2 cup… Read more >

Hi Pie

This is not your average apple pie.  It’s really not even a pie at all.  A crumble maybe?  Or a cobbler?  I don’t know.    But when you are in the FODMAPS elimination phase, and there are a dozen apples staring you down…well, shoot, it can make a girl go crazy!   This is a fairly ghetto recipe.  Accordingly, you probably have all the ingredients on hand.  After all, I made it at 10 pm, so it’s not like I was about to go to the store for the necessary materials to make a real… Read more >

Orangettes

Once in a while I get really into citrus.  You know where this is going right?   Yeah buddy! Composting your peels is great, but here’s an even better way to use them… Orangettes (v, gf) Ingredients: orange/tangelo peels (1 orange & 1 tangelo) dark chocolate (Ghirardelli’s Intense Dark Midnight Reverie 86% cacao) 1 tbsp sugar (NuNatural’s NuStevia pure extract) Directions: Peel your orange/tangelo.  *In case you’re not familiar with the tangelo, it’s a hybrid of a tangerine and a pomelo (or a grapefruit).  They have a tangerine taste, but are very juicy.  Tangelos also… Read more >

Protein pesto

Admittedly basil isn’t my favorite herb.  Over the years, you may have noticed how infrequently I make Italian recipes… This isn’t a fluke.  Garlic, oregano, rosemary, onion, and other such flavors just don’t whet my palate.  But I do have a thriving basil plant.  And I do enjoy raw pates.   So it would only seem natural to find a way to unite these two things.  Right?   My goals in making a raw pesto were the following: (a) to make it only minimally reminiscent of a true pesto (b) to make it protein packed (c)… Read more >
