Green bean casserole

I know there are a lot of families that consider a green bean casserole a holiday staple.  We were never that family.  So I’ve actually never tried a green bean casserole.  To be honest, it doesn’t sound that amazing. To be clear, this is not a green bean casserole.  But it is a baked pasta dish.  And it does have green beans.  So by default, it’s kinda a green bean casserole.  Does that make any sense?  Hmmm… Well, I’ll just share the recipe and let you decide. Creamy Green Bean Casserole (vegan) Ingredients: 16 oz…. Read more >

Salvaging the silk

Remember how sad I was about the nog nuisance?  Well, if there’s one thing you should know about me, it’s that I’m frugal.  I like to think of it as economically responsible, but I’ll admit, I’m borderline excessively thrifty when it comes to stretching my dollar.  And it’s not just with my money, but also with my food.  I’m the girl who takes home the last bite in a doggy bag.  I freeze anything and everything if I think it’ll go bad before I can finish it.  All in the name of food preservation. Lasagna rolls

I never thought an Asian inspired spring roll could taste so authentically Italian.  It seems weird, right?  But all it took was one bite and I knew I had made something particolarmente delizioso.  [fyi, that’s Italian for effing delish] Don’t judge these guys by their appearance.  I’m not exactly proficient in rolling spring wrappers.  As far as flavor goes though, these are dead on.  I promise.  Lasagna rolls (v, gf) Ingredients: rice wrappers (I double wrapped them, so make sure you have double the amount you want to make) tomato sauce spinach tofu ricotta  … Read more >

Peanuts!

10 years ago, if you asked me my favorite nut butter, I probably would have looked at you like you were crazy.  Was there anything other than peanut butter?  I certainly wasn’t aware of any other kinds.* I went through obscene amounts of peanut butter in college.  I was poor and it was cheap easy to steal from the sorority kitchen.  😉 However, since discovering almond butter, cashew butter, and sunflower seed butter, peanuts have been sidelined.  Poor little bench warmers. Anyway.  I felt like they earned the starting role in last night’s dinner, so… Read more >

Week notes

I was going to try to do a WIAW post, but I just couldn’t get it together in time.  Or photograph everything.  Here’s some of my “what I ate wednesday week” in bullet points. Monday Coffee.  Duh. My GF loaf is going fast and I still never even showed it’s birth.    Sunbeam and Bob’s Red Mill make bread making pretty effortless.     Unfortunately due to the garbanzo bean flour, my GI system was not very pleased with the final product.  Tasty?  Yes.  Bloating?  Very.  It took a bit of trial and error with other… Read more >
