Breakfast quiches

In my last post I mentioned that we’d be starting weekly meal planning.  We’ve never really done this before, but our budget is tight and grocery shopping is pretty much the only area that we spend.  Plus it makes sense now that Kyle’s working and his schedule is consistent (as opposed to when he was in school and constantly had random meetings or events or clubs or whatever).  Now we know when we will be eating and we can plan things out. Dessert Cubes

This recipe still needs tweaking but it tasted great, so in the meantime, here’s how to make it. The lovely people at Suzanne’s Specialties took an interest in my FODMAPs experimentation…and sent me some products to try out. Rice syrup is a FODMAPs free sweetener that I’ve been meaning to try for a while.  Usually I use maple syrup, but brown rice syrup offers a different flavor with a stickier, more honey-like texture.  And it’s also organic, non-GMO, and gluten free so there’s no sacrifice whatsoever. Herb scissors

I forgot to mention the new addition to our garden!  We have a lime tree now.  Wee!!    It’s the one on the far left above.  So the sprinkler situation above is our out-of-town solution to watering our babies.  The hose is attached to a sprinkler and timer and we set it to go off for 2 minutes at 6 am and 6 pm.  It has tons of settings and is pretty convenient.  Kyle’s parents let us borrow it while we are in Cabo for the week.  If the plants are alive when we come… Read more >

Egg-cellent

  Egg salad on a fresh baguette.   Soft fluffy bread.  Tangy mustard eggs.  They’re a damn fine pair.    The egg salad has 3 eggs (3 whites/2 yolks) + 1 tsp stone ground mustard + 1 tsp honey mustard + 1 tbsp plain greek yogurt So good.   I sprinkled a dash of salt on top afterwards.  And now in hindsight I wish I’d added a touch of paprika.  I’m so obsessed with eggs right now. Over the last few weeks…     Proof. 

$2 Meal

Top two complaints about being veg are (a) the price tag and (b) the time.*   This meal cost two dollars.    And that expense includes both bowls plus [un-pictured] second helpings.   Balanced, whole foods based, with all the macronutrients represented. And it took 10 minutes to make.   All you need is corn meal + eggs + avocado [all organic!].  Simple enough right?   Jazz it up as you want afterwards, but this basic combo will do your appetite and your wallet just fine.     Green Eggs & Cornmeal Ingredients: 1 1/2 cup… Read more >
