Crock-pots love lentils

Since Kyle and I have been making weekly meal plans (going on week four!) it’s become really apparent to me just how often we used to splurge on WF hot bars (as lazy backup dinner options).  Even now that I know what’s on the menu for the days to come, I still have moments of weakness where I don’t really feel like cooking.  The simplicity and deliciousness of their pre-made eats call to me.  Of course it’s often towards the end of the week when the fridge is stark.  It doesn’t help that I’ve been… Read more >

Nutty pasta

Pasta!! I made this over a week ago, but the recipe is still worth sharing. Although “recipe” may not be the right word, since it’s a pretty loose formula. But I made the effort to photograph it, so dang it, I’m gonna freakin’ share it. Roasted nuts – brazil, pecans, cashews, almonds Basil Parsley Garlic infused olive oil Plain almond milk Nutritional yeast Sorry for the lack of measurements, but I was kinda playing mad chemist, throwing things in until I got the right amount. Unlike my previous pesto, this was a really thick one…. Read more >

Sabra-cotti

This is a take on my previous manicotti recipe.  Only better.  Kyle called it the best I’ve ever made.  I’d love to take all the credit, but I have a feeling the Sabra tuscan herb garden hummus played a large role too. To make the manicotti filling, I used the entire block of organic extra firm tofu, a heaping 1/2 cup of Sabra hummus, and 1/3 cup frozen spinach.   I crumbled and mixed it all together with a fork (hello arm workout) until it resembled a ricotta cheese texture. Unlike last time, I opted… Read more >

Lactose-Free Crème Brûlée

It seems my expat sister has taken quite a liking to dairy free dessert baking.  It figures she’d develop this hobby after moving to Australia, so I can’t even sample her delicious products.  But at least I get some great recipes out of it.  Here’s the latest one, from Laura: One of the most devastating things to give up when I became lactose-intolerant several years ago (other than nachos) was crème brûlée.  Every time I saw it on a desert menu at a restaurant, I would cry a little inside .  It never occurred to… Read more >

Tempeh Stew

It rained here in Los Angeles last week (and effed up my tomato plant, but I don’t want to talk about that right now – so mad!!), so I do have an excuse to make stew in July.    I know I said last week’s meals were all planned out, but this stew was actually an unplanned meal.  I was going to make chili in the crock pot, but after making the other meals (breakfast quiches, Caprese Caesar pasta salad, etc.) I noticed I had leftover veggies and stuff that I could easily make… Read more >
