How to make soynut butter

This is not a recipe makeover, but rather a re-post of the process of how to make soynut butter.    You see, that post I wrote long long ago is somehow one of the most popular on my site.  And yet, the photos are hideous and don’t do the recipe justice in the least.   So I decided to write a revised post, in the hopes that more people will give it a shot.  Back in my college days I was a soynut butter fiend.  Just ask my bestie, Jess.  We pounded the stuff.  It… Read more >

Chickpeas & Bread

I made this for Kyle, not sure how he’d like it.  He is picky about things that try to mock tuna salad (he loves TVP, but won’t try my TVP "tuna" salad for some reason).  The good news?  He really liked it.  He also said it reminded him of tuna salad.  Maybe it’s been a while since he’s had tuna because I definitely disagree.  This chickpea salad isn’t tuna-esque at all.  But whatever.  He liked it, so that’s all that matters.  Oh, and I think it’s pretty good too.  😉   Quickie Chickpea Salad… Read more >

Broccoli & Quinoa Orange Chick’n [giveaway]

Name a vegan meal that’s more simple than an Asian stir-fry.  Go on.  I dare you to come up with something more basic. I’ll take it a step further.  How about a stir fry that’s got all the flavor of a restaurant dish but is ready in under 30 minutes? Now I have your attention. Guess what they are carrying at Costco now!?!? You guys.  This is huge.  Gardein’s Mandarin Orange Crispy Chick’n is now being sold in the frozen section at Costco. The chicken is separate from the little sauce packet.  They were all… Read more >

Just two scones

I’m not sure if it’s just me (it wouldn’t be the first time…), but sometimes I bake things and get sick of them after a few servings.  Maybe that sounds lame – it’s just that I don’t necessarily want to eat banana bread every day for weeks in a row.  I like diversity.  I want to be able to have oats or toast or grits or something else in the morning without worrying about my precious baked goods going bad.  Most of the time I end up freezing the leftovers (imagine how great of a… Read more >

Holiday leftover solution

I realize certain things are not meant to be photographed.   Stew is one of those things.  [Same goes for certain angles of my pregnant body.  And the spider web situation we have going on in the front yard.  And Kyle’s closet.  No seriously, it’s out of control.]   Maybe Ansel Adams could make this look tasty, but I am working with an iPhone at 5 am in a poorly lit kitchen.  Natural sunlight, what??  Just trust me.  It’s good.   Leftover Crock-Pot Stew [vegan, gluten free] Ingredients: 2 tbsp olive oil 1/2 yellow onion… Read more >
