I (semi) promised my G-ma that I’d post about our baby shower (although you’ll notice I made no such promise about how timely the post would be). [Me + G-ma] In truth, I didn’t take my camera because I was just going to soak up all the fun and family time. But my aunt, cousins, sister, and mom did SUCH an outstanding job with everything – from the decor to the food – that I feel compelled to share. I’ll include a vegan/gluten free dessert recipe, too (so it’s worth your while to read). iPhone… Read more >

Here’s the deal with that Portobello & Kale Sauté with Peanut Ginger Rice… It was really good, but totally jacked up my GI tract. Would I eat it again? Ugh, I wish I could say no, but I know I will. The leftovers are in the fridge just waiting for me to give in to my moment of weakness. Sure I could offer them up to Kyle (he loved the meal as well and has been in a huge kale craving phase lately), but I’m kinda selfish when it comes to certain things (like… Read more >

Monday Risotto Tuesday Quinoa quiche. It’s a cheap and easy staple. Not much else to say. I wish I could tell you this provided leftovers…but we are oinkers. Wednesday Curry stir fry with quinoa. This was the star of the show. I’ve been working on actually going through our pantry and (gasp) using all the stuff I’ve been hoarding since the 2000s. I got this jar of Patak’s mild curry paste the same time (and place) I got these noodles. Now that I just googled the company, I see they have a ton of pastes… Read more >

This was my breakfast last Sunday. Then again on Monday. And then again on Wednesday. [Tuesday I went back to the egg and toast routine] There’s no saying how long this will last… Just one massive pancake. The whole batter poured into the 8 inch pan. It’s so fun to eat when it goes on forever and covers the whole plate. These photos are semi-deceiving. These are large dinner plates…making this a pretty sizable flapjack. Oat Peanut Pancake [FODMAPs friendly, gluten free, dairy free; serves 1] Ingredients: 5 tbsp oat flour (certified… Read more >

We went from your average weekly planners to uber type A budgeters this January. I actually started a spread sheet on excel to track our monthly grocery expenses so that we could really stick to our financial goals. Of course the primitive nature of the document was hilarious to Kyle, who could make something a million times more sophisticated in his sleep. So then I signed us up on mint.com (it’s a site that tracks your credit card statements and payments and all that jazz). Way easier. Way more practical. It’s hard to say how… Read more >
