No Gratitude

Before I get to this…   I have to show you what I threw together the pervious day. People always love the quickie meal ideas I give more than the elaborate recipes (okay, I never have elaborate per se, but more involved).  So here’s another one that is highly adaptable and took under 5 minutes.   Thai sweet potato rice casserole with black beans.  Sounds like it took a lot of effort, when really, it was all thanks to a box, a can, and an appliance.    Pacific’s thai sweet potato soup may have been… Read more >

Kale & Quinoa Sunflower Macro Bowl

Like I mentioned forever ago, I made this for dinner, lunch, and then dinner again because it was so good.   It’s inspired by Native Foods’ sesame kale macro bowl, which I’ve gotten countless times before.   Chef Tanya’s version has steamed kale, brown rice, creamy ginger sesame sauce, tangy sauerkraut, gomasio and toasted sesame seeds.  Mine had steamed kale, quinoa, sauerkraut, and a creamy sunflower seed dressing.    The only thing you really need a “recipe” for is the dressing I made (because otherwise, you just add quinoa and kale and sauerkraut to a… Read more >

Sweet & Savory Breakfast Pie

Making breakfast dishes in casserole pans is my new favorite hobby.  It makes the morning run so smoothly when there’s already food prepared.  All you have to do is cut out a piece and (re)heat it in the microwave.  So I can shower and Kyle can serve himself breakfast one-handed while holding P.  Don’t get me wrong, Kyle’s certainly capable of cooking things for himself.  It’s just nice to use teamwork when it comes to our party of three operations.  We take turns sleeping, exercising, working…so why not cooking and eating.  It would be… Read more >

Quinoa Bean Burger

Most of the time I make veggie burgers I don’t measure the ingredients (because I’m often in fridge scraping mode, trying to use up whatever odds and ends are on their last legs). Throwing things in a bowl, mashing them up, and hoping they hold together and taste good doesn’t always turn out.  For better odds, I should probably follow a real recipe.  One of these days I’ll plan ahead like that…but for this recipe, I was in kitchen clean out mode.  At least I wrote down the recipe this time!  Progress…   Quinoa, Bean… Read more >

Trying Thai cooking

I made this on our last night in Nor Cal and just wanted to quickly share the recipe I used. I found a few different recipes and combined them to make my own.  Can you believe I’ve never cooked with coconut milk before?  I love Thai food, especially the really amazing curry coconut milk broth dishes.  I guess that’s probably why I’ve never taken a stab at creating something similar at home.  It seems like mission impossible to get the perfect balance of Thai flavors and spices (especially when it comes to international spice… Read more >
