I have been making legit dinners lately. It’s good to be back in the kitchen – planning weekly menus and grocery shopping. Much more wallet friendly too. Oddly enough, I now despise going to the grocery store. Which is SO weird because it used to be one of my favorite things ever. I used to love browsing the aisles. We had such awesome weather this weekend (status quo for Nor Cal, but still worth noting) so we really made the most of it. Lots of outdoor time! Whenever I get a recipe out in real time it’s because it was so good I can’t not share it immediately. I basically dropped everything (except my son of course) to write this post. Vegan grape & chix salad [vegan, gluten free] Ingredients: 1 cup diced vegan chik’n meat (ie Beyond Meat, gardein, etc.) 1/2 cup halved red grapes 2 tbsp vegan mayo (ie Nayonaise, NayoWhipped) 1 tbsp garlic infused olive oil (ie Garlic Gold) 1/4 –1/2 tsp curry powder 1/2 tsp mustard powder salt & pepper (to taste) Directions: Dice faux chick’n meat and halve grapes.
