Powerful strong greens

Talk about a lettuce with a kick!  Arugula is something fierce.  I’m not a huge fan, to be honest, but if it’s amongst other greens I don’t mind it. BBQ jackfruit

I’d never even heard of jackfruit until I moved to Los Angeles.  Apparently it’s a pretty popular vegan replacement for meat in dishes that would otherwise use shredded chicken or pulled pork.  Something about the stringy consistency. What the heck is jackfruit anyway? Bacon!

Yes bacon.  Out of coconut.  It’s insane.  I don’t even get it but I’m going to stop trying to analyze how this magic occurred and just enjoy it. Pesto & Pancakes (not together)

Here’s some of the meals I prepped for last week. If you recall, making bulk grains in the rice cooker was one of the things on the checklist.  I used this wild rice in Kyle’s breakfast burritos (with lentils, salsa, and cheese) and in my lunch salads (with lots of veggies).  And then in this dinner, of course. A FODMAPs friendly “what I ate” day

Breakfast Udi’s mighty bagel with organic peanut butter and a fried egg.  I had the second half of the bagel a couple hours later.  Also with PB PB. I’m seriously obsessed with these bagels.  They are so hearty and full of seeds and whole grains, you’d never know they are wheat and gluten free.  Definitely the best GF baked good I’ve tried so far.  What sets it apart though, is the fact that it actually tastes like a bagel.  Not eggy bread.  Not nutrient devoid buns.  Not cardboard crap.  Real ingredients!  I can SEE the… Read more >
