Cornbread salads

I made this cornbread for one purpose.  Salad croutons. Cheesy Scones & BBQ tempeh

Easy Peasy Baba Ganoush

  This meal was entirely centered around the smallest thing on the dish.  The babaganoush! If you want to make a real legit baba ganoush, David Lebovitz is your man.  I had read his recipe long ago and thought I could go off memory.  I totally botched it (forgetting almost every ingredient aside from the eggplant) but the main thing I took away from his recipe (and did implement in my version) was charring the skin first. Freezer meals for your summer veggies

I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. I’ll never cook again
