Round 2! Actually, if you count the Thanksmas we had in Tahoe earlier in December with Kyle’s family, this is really our third Christmas. No such thing as too much celebrating, right?! I go back and forth in terms of breakfast cravings – sweet or savory. I love quick breads (especially this banana bread), but when I want a savory breakfast I’m torn. Swim lessons always wear P out so I timed the 50 minute drive to my parents’ house accordingly. We left straight from the pool in Davis and patty-cakes slept the ENTIRE drive (!!!). He hates car rides nowadays so this was huge. I even took advantage of the drive thru Starbucks in Dixon. 🙂 After hanging out with my mom for a bit I made some lunch with leftovers in their fridge. I’m not Jewish so I’m not promising this will be anything close to authentic, but it uses potatoes and resembles a pancake, so hey! Latkes! Truth be told they tasted a lot like tortilla espanola.
