Lemon!

You have to say that like Jack Donaghy.  Oh 30 Rock, I miss you. I really don’t crave lemon too often.  Especially in winter.  Citrus seems summery to me, despite the fact that all the orange and lemon trees in our neighborhood are just now bursting with fruit.  Anyway, I picked a few lemons from our neighbor’s tree because I was in the mood for lemony things.  I swear my brain thinks up all the best recipe ideas in the late night hours as I lie in bed trying to fall asleep.  [Which is actually… Read more >

More allergy free baking with coconut flour

Success number one with coconut flour baking was enough of a confidence boost to encourage me to try again.  So I did.  This time with a few of the super ripe bananas we had on hand.  Success number two! Because the bananas were almost entirely brown I didn’t think much sugar was necessary and I was right!  This bread is sweet in a way that doesn’t taste “healthy”.  I loved it.  And so did P.  I think it’s going to be the recipe I use for his birthday cupcakes.  Can you believe it’s almost 1… Read more >

Quiche is a weird word

I meant to make this with a crust, but when I opened this gluten free crust it was covered in mold.  Boo!   What the heck? I’m going to call this a fluke because I tried this crust before and loved it (minus the mold).  But this was definitely a bummer to open.  Since it was nap time I couldn’t do anything but go crust-less.  [Okay that’s a lie, I could have made my own crust, but I tried that and it didn’t work out.  Instead I wound up with pancake like biscuits.]    They… Read more >

Chocolate Dipped Coconut Macaroons

Kyle brought these home for me from work. Marc’s mom’s macaroons Ingredients: 4 egg whites 1 tbsp vanilla 1-2 tbsp sugar (to taste) 1/4 tsp salt 2 + 1/3 packets of TJ’s sweetened shredded coconut (each packet is 6 oz so ~14 oz total) [optional] bittersweet chocolate, melted Directions: Beat egg whites until soft peaks form, add salt, sugar, and vanilla.  Mix in 2 1/3 of coconut packet. Scoop into a medium spoon and press in. Put on baking sheet lined with parchment paper. Cook at 350 degrees F for 15-20 minutes. Coconut burns easily… Read more >

ABCD quick bread

Making quick breads is really as easy as it gets.  Kind like learning your A,B,C’s – once you figure out the basics, it’s a snap!    I promise I didn’t plan the name of this bread around that little theme, but it was too perfect to NOT call this ABCD bread. If you like dates, you will like this bread.  If you don’t (you’re crazy but oh well), you could sub in raisins. It doesn’t have much of a rise, which I may try to figure out in future versions.  Maybe extra baking powder or… Read more >
