4 ingredient vegan chocolate ice cream

Ignore the chocolate chips in the photo below, because that’s an [optional] fifth ingredient. Oh my gosh was this ever good. And easy!  So so easy!  None of the boiling milk and dissolving sugar nonsense.  <–Lazy girl, no shame.   I got an ice cream maker for my birthday (in October) but it wasn’t really put to use very much over the colder months of winter.  Now, though.  Now, is ice cream season. And I am alllll about the coconut milk versions.  I’m pretty much be doing different mixes of this basic guideline from now until… Read more >

Quick bread for little fingers

I made this bread for me and P thinking he’d do what he always does – try it, like a few bites, but ultimately be over it by the 4th bite forevermore.  NOPE!  Little man took this loaf down in two days with not much help from mama (which was a difficult sacrifice on my end because it was gooooood). Coconut Flour Banana Bread [vegetarian, gluten free, grain free, nut free, soy free, dairy free] Ingredients: 3 large super ripe bananas, mashed 3 eggs 1/4 cup applesauce 2 tbsp coconut oil 1/2 tsp cinnamon 1/4 tsp… Read more >

Puffed Rice Granola

I tried switching P from corn to rice puffs recently (I may have mentioned it in a previous post but I can’t remember) just for a touch of variety.  The corn puffs aren’t exactly health food, but neither are the rice ones.  They are just easy for end of the meal (clean up) time and on-the-go snacking.  In any event, he didn’t take to the rice puffs at all so I’ve been trying to think of something to do with them.  I asked twitter for non rice crispy treat ideas but got crickets in return,… Read more >

My highlights: week 7

Mama’s little helper.   The addition of shoes to the wardrobe has transformed him into a little boy.  He’s non-stop exploring.  Still not walking, but he’s perfected his cruising skills, so it’s only a matter if time (days). Green toys.  And now the word tractor is a part of his vocab.  Davis appropriate. Inspired by Vintage Mixer’s kale coconut & chicken salad I made this guy for lunch.  I have been struuuuuggling with lunches lately.  I don’t know what to eat without soy or nuts or hummus.  I’ve been trying to limit meat to… Read more >

Sneaky squash muffins

As I’ve shared several times before, this recipe is on repeat all the time here at the HHH household.  It’s an allergy friendly winner!  I make it with blueberries instead of chocolate chips most of the time, but sometimes (if I don’t have blueberries on hand), I just leave them as plain pumpkin muffins without any add-ins.  Still great!  Anyway, I wanted to try a savory version in an effort to trick P into eating some squash.  Yes, I’ve no resorted to "sneaky chef" techniques – baking veggies into my kid’s food.  I’ve been… Read more >
