Single serving waffle

Remember how I turned into an egg once I got pregnant?  Since then it’s been savory breakfasts 99% of the time.  Fried eggs with a side of fried eggs please.  Until last week when my body randomly decided waffles and banana bread were the only way to start the day. Tweaking it

My baby quick bread has been through the ringer in terms of testing and what I’ve decided is that the bananas’ ripeness (and how much I mash/whip them) is the variable that I can’t account for…and the one that can make or break the texture. I used 3 suuuuuuuper ripe bananas for this loaf and it was perfect.  Moist enough for P.  Sweet without added sugar.  Sturdy enough to be sliced and eaten by me or P (and come out of the pan in one piece!).  And, ummm, delicious, obviously. Chickpea Wild Rice Salad

I am really on a roll with all these posts in a row!  Sadly, I lost my camera battery charger and since it died at our Memorial Day Party I haven’t been able to upload pics (such a bummer because we set up the baby pool for the littles and OMG cuteness overload).  I have my cell phone photos but they’re subpar at best.  Still, I’d like to share this recipe since it was a real hit and super easy. Sweet peachy cornbread

Brownie mix cookies

I was debating between making brownies or cookies for our memorial day party and was kinda in the mood for shortcuts since I was making a few other things.  So I decided brownies would be easier because TJ’s has a gluten free mix. But then! I never would have thought of this on my own but I happened to look at the bag and noticed a cookie recipe.  Best of both worlds.
