Pounds of zucchini

Zucchini bender! My friend got something like 4 million pounds of zucchini last week and has been unloading them on me, much to my delight. I have already baked two loaves and two batches of muffins.  And I still have 6 left!  I’m so excited because P loves them just as much as I do so we are flying through them. Molasses as a sweetener

If you want to make 1 1/2 loaves of banana bread (one large, one small) here’s the recipe.  Alternatively, you could make one loaf and some muffins.  Not sure how the cooking time would vary for those but I’m just throwing it out there because I made this recipe and it had too much for one loaf but was still perfect and definitely worth sharing. Allergy friendly yellow cake

I know (I think?) what you’re thinking.  Yellow cake?  What’s the point?  Chocolate is where it’s AT!  I agree with you, but every once in a while you need some quality yellow cake in your life.  Like on the 4th of July. Weekend activities and my first recipe with bacon

This past weekend was all kinds of awesome.  We hung out with new friends who I’m certain will become old friends.  P got a taste of his first slip ‘n slide.  I ate a vegan ice cream sandwich that blew my mind.  And we got to enjoy some quality family time before Kyle went away for work.  Summer is his busy season so the sporadic posting often has to do with me being a solo parent while he’s off at random solar sites.
