Freezer Meals

Last time I was pregnant I wasn’t very good at preparing meals in advance.  I wasn’t terrible – we had some leftovers in mason jars – but not a lot and nothing super organized.  This time around I tried to get my ducks in a row before sh!t hit the fan and we had TWO KIDS.  Starting back in December I planned a meal or two extra into each weekly menu and cooked it and froze it for the postpartum period.  In case anyone else is in the same boat (for yourself or another new mama)… Read more >

Baby donuts

Calm down, I’m not feeding my two year old son donuts.  But he doesn’t know that. As it turns out, toddlers like eating things in fun new shapes, even if it’s the same batter as every other thing I bake!  Ha! To be fair, it’s not actually the same batter as the other breakfast stuff he eats, but the ingredients aren’t that different (they’re still plenty healthy), so it’s an easy option for me to offer him and a win that he is obsessed.  As you’ll soon see, they are super simple. Allergy friendly cupcakes for three

I didn’t end up making these for my little dude’s birthday party because I ran out of time and used an allergy free baking mix instead (Cherrybrook Kitchen), but they were great and P loved them so I figured I should share.  If you multiply the recipe by 4 you would have a dozen allergy-friendly-not-too-sweet-but-delicious-and-fluffy-vanilla-flavored muffins.  And if you add frosting they become cupcakes, so there you go. My first plantain

I randomly decided I wanted to try plantains a few weeks ago and so I tracked one down (not hard actually…they’re at WFs) and then it sat in the fruit basket for over a week. I thought it would be good fried for breakfast, like a potato, since it’s a starchy kind of thing.  But I just never got around to it…and next thing I know it’s completely black and getting soft and (ack!) The weekly menu

Sorry for the late post…do you guys like seeing these family meal plans?  They’re my favorite posts that other people do because they give me good dinner ideas, so hopefully others feels the same.  I always bookmark the recipes I like as I browse blogs/websites throughout the week and then on Friday or Saturday go through them with Kyle and plan out next week’s eats.  I factor in weekly grocery sales and what he is craving, so I often don’t get around to all my saved recipes but that’s why pinterest exists, right?  I admit, I was… Read more >
