The weekly menu

I will warn you going into this post, the planned menu was largely ignored this week thanks to the previously mentioned GI bug that made it’s way through the house. We started strong with the pulled pork Caesar (as written on the blackboard), but from there it all kinda deteriorated. This pulled pork is from Costco… The only ingredients are pork, water, salt, sodium nitrate, and spice extract.  It comes with a TON of meat, and even after all three of our dinners, there’s still enough for at least four more family meals.  Seriously, lots of bang… Read more >

Weekend prep needed

Two big reasons for getting myself in gear this past weekend: 1. Kyle is out of town for a couple days and 2. I need to get my eating back on track [Tip of the iceberg] I’ve been eating good quality whole foods for the most part, but I have been eating a TON of candy at night.  Like a ton.  And it makes me feel gross.  I want to stop it.  So that means I have to set myself up for success by making other options.  I have to eat yummy food to make sure I… Read more >

Chocolate coconut bombs

This is the recipe for the delicious treats my friend made me…which are basically chunks of heaven.  Not too sweet but pretty decadent, and yet I didn’t feel gross afterwards. Chocolate Coconut Bombs [vegan, gluten free, dairy free, soy free, optional nut free] Ingredients: 1 cup coconut oil 1 cup nut/seed butter of choice (she used chunky natural almond – chunky is definitely good for textural oomph in my opinion, sub sunbutter for nut free option) 1/2 c honey 1c cocoa (she used a mix of baking cocoa and special dark) salt and vanilla to taste… Read more >

Brianna’s salad

I’ve decided I have a new goal for spring and summer and that is to find a way to make something with every one of Brianna’s salad dressings.  Nope, this is not sponsored or anything.  I’m just obsessed with the poppyseed one so why not try the rest!?  They are probably just as awesome.  The honey mustard and lemon tarragon in particular sound so freakin’ good! Peach Poppyseed Chicken Salad Ingredients: 16 oz baby greens (spring mix or spinach are perfect) 2-3 peaches, diced (I had really small ones so I used 4, but 2 normal… Read more >

Lactation cookies

This recipe may only apply to 1% of my readers (if that) but if I’m being honest, the fact that these ingredients are supposed to assist in milk production doesn’t totally matter because they taste awesome.  I mean, they are cookies.  So, duh.  And they have wholesome ingredients like coconut oil and oats so they aren’t going to make you feel gross after you binge on the whole batch. As hippie as I am, I didn’t even know about lactation cookies until I was well on my way nursing P and I never had any issues… Read more >
