Gluten free bread maker bread 2.0

A second version of my previous baking success…means I’m basically a pastry chef now right?  HA!  Not even.  I’m pretty proud of this version though and have already remade it. Next up is trial and error with substitutions.  Hopefully a xanthan gum free one and maybe even an egg alternative one??  Those are my Feb goals. Deep dish polenta casserole

I have a limited rotation of breakfasts that I make for Kyle, usually strata or coffee cake (with days of cereal in between if I can’t get my act together in time).  It’s because those are the easiest things to make and then last a while which streamlines mornings for us all. Tea Leaf Granola

I first got the idea to do this from Caitlin’s blog, but she used peppermint tea which is totally not my thing.  But I made a mental note to revisit the idea when my current granola stash ran out.  And serendipitously enough, the very next day I received an email from Andy, the founder of Plum Deluxe tea.  They make organic fair trade loose leaf teas with interesting combinations and blends.  You all know, I’m a tea lover, so obviously I was totally on board to try them out and share my thoughts with you guys. My (new) favorite kale salad

This is a silly post because I eat kale salads for lunch basically every single day.  And they are usually the same. Kale and cabbage massaged with some dressing, plus avocado, dried cranberries, and seeds (either pepitas or sunflower). As such, I don’t take pics of them anymore.  It’s repetitive.  Delicious, but repetitive. But lately, I’ve been mixing things up.
