Instant Pot Marinara Sauce

This. Was. So. Easy. Without further ado…here is the instant pot website’s recipe, from which I adapted my own version (because tomatoes fresh from the garden are exponentially more divine than canned ones). Instant Pot Marinara Ingredients: 2 tbsp olive oil 1 tbsp garlic infused olive oil (if not aviding fodmaps you can use fresh minced garlic) 1 shallot, diced 1/2 small yellow onion, diced 8 baby carrots, diced 4 oz mushrooms, diced 1 1/2 tsp dried basil 1 1/2 tsp dried oregano 2 tsp salt 14-15 large tomatoes, chopped 1/4 tsp black pepper 2… Read more >

Prepping blended green juice

I feel like I’m so far behind in posting because we have been going going going…that’s the way of this summer it seems.  Kyle was gone for a couple of days last week and it was a fairly empty week as far as the kids’ activities were concerned so I made an impulsive field trip to SF for the day. We went to the California Academy of Sciences.  And just for fun, check out the photo on the right from a trip we took previously almost exactly one year to the date! I packed us lunches…. The Junky Salad

Continuing the easy path to dinner bliss… Remember the taco salad recipe I posted from my reunion party? I made it!  And it’s just as junky as ever, but slightly…how do I say this…fresher??  More nutrient dense? I had half a bag of these left so I swapped them in for the Doritos.  Big time upgrade right there! Crushed chips in salads make the recipe pop like no other ingredient can.  Truth be told, I don’t know that I’ve ever had a Dorito outside of the salad that this one was inspired from.  Is that… Read more >

Kohlrabi noodles

I made this over a week ago and totally forgot to post about it! Apparently I am a MAJOR sucker for a veggie in spiralized form.  I saw this bag of kohlrabi linguine at WF when I was in the produce section grabbing more spiralized butternut squash noodles. I’m including this photo of the back because I thought it had good ideas and I wanted to remember to make them when I get them next time.  Butter and cheese may be obvious, but bacon and snap peas!?  Yum! I took a lazy-ish twist on the butter… Read more >

Noodle trifecta

Let me introduce you tooooo… the noodle trifecta. Zucchini zoodles + butternut squash (boodles??? can we call them that??) + brown rice spaghetti. I don’t think I can get on board with calling the squash spirals boodles.  Let’s just pretend I never suggested it, ok? Since I’m still feeling the Mediterranean flavors big time, this sun dried tomato pesto shrimp pasta dish hit the spot. I got this from Costco last month in the height of my sun dried tomato obsession.  How amazing does ORGANIC sun dried tomato pesto with basil sound?!?! Check out the… Read more >
