Greek chicken salad

THIS DINNER! I think I may be eating this for the next week straight.  Or at least every day that Kyle’s out of town from now on.  It’s so good!  And so easy! It all came about when I was brainstorming what to make for dinner.  Usually when Kyle’s gone I try to make something with ingreds he doesn’t like (ie zucchini, cucumber, dill, pickled stuff).  But what I was really in the mood for was Italian dressing.  I know that sounds weird, but when you have a craving you have a craving. Nectarine cobbler

You HAD to know this was coming, right? This was actually inspired by a pot of steel cut oats I made for the kids last week, which smelled JUST like pie and thanks to the vanilla, cinnamon and brown sugar (!!!) 3 nectarines down, 50 to go

On the left, a block of frozen solid chicken breasts straight from the freezer.  And on the right, the magic of the instant pot, chicken that took 20 seconds to… Read more >

Sure enough

Sure enough, I polished off this green juice and made another right after!  So I am set for the next few days again. And sure enough, that WF grain and kale salad lasted me two lunches. So now let’s talk about dinners! As a challenge to myself, I held off on grocery shopping this week. I knew I had enough leftovers to get me through Monday and Tuesday so I wanted to see how far I could get.  I had pulled pork in the freezer and broccoli in the crisper drawer and the rest of Monday’s… Read more >

Pesto Salmon Gnocchi

Summer time and the living’s easy… I had an identity crisis on Wednesday when I was BY MYSELF for 2 hours in the middle of the day.  Kid free. Ok, I will back up. For the first time in all of my time momming, both kids are drop off eligible for camps that are at the same time!  His was from 9-2 and hers was from 1030-1230.  I wasn’t sure how they would do but it was easy peasy, no separation issues at all!  [FYI that’s still rare for us, even at places like church… Read more >
