T-G-I-FRI catch up

Despite Kyle being out of town, it has felt like Friday all week to me!

It’s probably partly to do with the kids having both Wednesday and Friday off school. So Tuesday basically was a Friday. And then Thursday was also basically a Friday. So it’s a three day weekend!

But mainly, it feels like the weight of the world has been lifted now that we have made it through the election without a 2016 repeat. And for that reason, there’s a little extra pep in my step. Very Fri-YAY-esque.

Here’s some random cacth up pics.

Chicken salad + broccoli slaw + smokehouse almonds + avo = power packed lunch

We don’t do it every Wednesday, but on most hump days I’ve been taking the kids to Nugget for lunch. I let them pick out what they want from the prepared food and then I get myself something too. It’s the only day of their schedules in which they both end early enough and have a long enough overlap to allow it to happen. [Yes, their school schedules are insanely complicated and it’s super annoying and difficult to keep track of. Hers, in particular, because even months in, it keeps changing.]

While we are talking about our meal schedules…the other lunch “routine” we do are mayo Monday sandwiches.

It’s a long story, but the short version is YEARS ago I played the song Manic Monday for them (because it was a Monday). V was really young at the time and thought it was Mayonnaise Monday. So then we started calling it Mayo Monday. And eating turkey sandwiches every Monday to celebrate. Since then, we have sometimes done other deli meat, but the mayo is non-negotiable. It’s a full on thing. We continued it in Maui. We do it if we are at my parents’ house. It’s a silly tradition, but it has stuck around and makes deli sandwiches novel when you only have them once a week. 🙂

A tale of two kale salads…both with kale, cabbage, avo and almonds, but otherwise very different. The above has poppyseed dressing and broccoli slaw, whereas the below has Thai sesame dressing and cilantro.

Both very good. Sometimes I feel like sweet, sometimes I feel like spicy.

One night I made pizza for the kids and I had leftover stuffed spaghetti squash lasagna. Italian food for all!

More pasta for the kids with this lunch. These are Annie’s white cheddar shells with peas. One box is the perfect amount for them to share if I bulk it up with a veggie.

BROWNIESSSSS. Nuff’ said.

A friend sent me these to try. I wanted to like them, because I thought it would be a good habit for me (I am terrible at proper hydration), but I wasn’t a big fan. Also some of them made me feel slightly nauseous? Not sure if that’s a normal reaction, but it wasn’t great.

One kids likes hummus and one doesn’t (I blame it on lingering issues from his sesame allergy). That’s why P (left) got two hard boiled eggs instead of hummus.

Also, V (above/right) doesn’t really like hard boiled yolks too much, so by giving her only one egg she was ok with it.

This dish is 100% the embodiment of lazy and random.

Inspired by the lunch bowl I showed earlier, I had ground beef and cabbage and threw them together for a Thai inspired meal.

It was good served over white rice with a peanut butter tamari sauce and topped with basil.

Another random kids lunch (just so you don’t think we are too cutesy coordinated with our Monday and Wednesday tradition).

This is called, I have nothing planned and it’s 11:50!

Broccoli thawed from the freezer, white beans and marinara from the pantry. Top in nooch or parmesan and call it a day.

Good, but not amazing. Ate it all in one sitting.
