Here’s a quick and easy option for week nights. The kids love this and it couldn’t be faster to make! Do you have some kind of lettuce? Frozen edamame? Then you’re set.

Sweet Miso Soy Saute
Ingredients:
- 1 tbsp coconut oil
- 1 tsp sesame oil
- 1 tbsp mellow white miso paste
- 1 tbsp maple syrup
- 1 tbsp water
- 1 tbsp tamari
- 3-4 cups greens, chopped (I used both chard and bok choy but spinach would be great)
- 1 cup edamame
- to garnish: sesame seeds, green onions, red pepper flakes
Directions:
In a large saute pan, combine oil, miso, syrup, water, and tamari. Turn on low heat and once the liquids are warmed, add the chopped greens.
Let the greens wilt a bit and then add the edamame.
Cover with a lid and cook until the edamame is fully heated.
Serve over rice.
Garnish as desired with sesame seeds, green onions, and chili flakes.
