Ok, actually being vegan in Mexico is pretty impossible, so I’ve made a few compromises for the sake of enjoying the vacation…let’s just say, chips and guac will never get old. But I’m getting ahead of myself.
This morning I slept in and woke up to the sun beaming through my window. Here’s the view from out my room.
LOVE it!!!! New York, smell ya later. My parents’ villa has 3 floors and my room is on the bottom floor along with my parents’. There’s also the casita (where my sis is staying) which is a single separate room/bathroom, next to the garage.
I enjoyed this Mexican coffee while vegging by the pool…
Look what my family got for me! The left is lactose free milk, the right is chocolate soymilk. Score!
I couldn’t decide, so I tried some of both. Then made myself a cafe con leche.
And after the caffeine loading, we were off to the beach! Sunshine!!
We read, laid out, and played in the water until my stomach started growling, lunch time! We went to a really fun place called The Office.
These chips were GREAT!!! The guacamole disappeared pretty fast since we were all starving, but the pico de gallo was also really good, so we def got a second round of chips. I loooove hot, fresh tortilla chips.
I had a huge iced tea to drink (plus lots of bottled water) and then my lunch came…I ordered fresh fish tacos, and whoa!
Don’t be deceived, this plate was HUGE. Those are big flour tortillas each with a filet of fish inside (not chunks of fish, whole freakin’ filets)! Sooo much food. I stuffed the tacos SO full with mexican rice, black beans, salsa, and guac that I ended up eating only 2 of the 3. They were amazingly delish, though, totally worth how full I felt after.
Following lunch, my sis and I rented a jet ski. SO FUN!!
I can’t tell you how much of a blast this was!
