Super fast vegan mac ‘n cheese

This isn’t gourmet.  By any stretch of the imagination.

Noodles.  Whatever kind you want.

Sauce.  Nutritional yeast, plain almond milk, lemon juice, stone ground dijon mustard, & soy sauce.

Whatever you do, don’t skimp on the nutritional yeast.  It made up 90% of the sauce and the rest was just to give it a little extra zip.

Then – and this goes without saying – just coat the noodles in as much sauce as you can.  Yesssss.

    Nice. I make a very similar mac n cheese but I also pump up the sauce by stirring in a few tablespoonfuls of hummus. It makes the sauce stick to the noodles!

    Hey – I made vegan mac ‘n cheese last night! My ‘cheese’ recipe is much different than yours (from an old cookbook), but is cheesy and delicious. I think adding two tbsp of tomato paste gives a little extra something-something. I like the hint of tomato 🙂

    the ebook is 99% vegan and entirely gluten free.

    i looked up the ingredients in nutritional yeast and the macro components. its not a fodmap.

    nice! usually im more of a cashew fan for bulking up cheese sauces but i was so lazy with this one…tomato paste is a good call. ill remember that for nest time.

    Hey Elise:

    That dish looks so delish. I have a few questions for you:

    1) How much nutritional yeast do you eat per day? What’s a healthy amount?

    2) Can one become vegetarian without eating faux meats such as seitan and veggie burgers? If so, what foods replace the vitamins/minerals found in meat?

    3) I really want to become vegetarian since it aligns with my values but the one thing that I’ve found which makes it difficult is that I don’t feel full unless I eat meat and I fear losing certain nutrients unless I continue with my current diet which includes meat. Do you have any suggestions for embarking on a vegetarian diet?

    You always make your meals so appetizing and I like how your meals seem so well rounded without animal products. I sometimes have a hard time thinking of easy dinners which leave me satisfied unless I have meat, yet eating meat makes me feel really guilty because I love animals so much, so that’s why I wanted to seek your input on this venture.

    Cool! I’ll have to get the book.I might wait a few more days before trying the yeast. It’s been 3 days on elimination and while there have been changes,not really improvements.I’m a little disappointed even though I know it can take longer!

    i dont know exactly how much nutritional yeast a day i use…sometimes i have a few tbsp worth on each meal and some days i go without it entirely. its kinda random. in terms of whats a “healthy amount” im not sure if theres a max you should have but i think as long as youre not going through a huge tub a week youre fine. its basically just b12 vitamins which your body excretes when in excess (unlike other vitamins that can accumulate and reach a toxic level). but im not a registered dietician, so please dont quote me on anything. everything in moderation, right?

    you can easily be vegan without fake processed “meat-like” products. beans are a perfect “real food” sub for most meats. i make tons of traditional meat dishes with chickpeas swapped in. additionally, tempeh and non GMO tofu are good subs. they arent as high in protein, but theres protein in veggies, nuts, beans and grains too…so as long as your diet is well rounded youll get plenty of all macronutrients.

    your concerns are totally valid. my husband often felt the same way about meatless meals, but hes now a vegetarian and has completely adapted to the lifestyle. i think it comes down to figuring out what fills you up. as long as you have enough fat and protein in each meal, you should be satisfied. but there may be a weaning process too…these things take time, but your body will adjust! the trick is realizing that whole grains and veggies have fiber which adds bulk so you feel full faster, so if you have only carbs in a meal, youll feel full initially and then it will burn off and youll be hungry again soon after. fat and protein help slow the gut’s digestion and also keep you feeling satisfied longer. so just make sure to get all the macronutrients in each meal.
    in terms of feeling like youll be missing out on nutrients by going veg, that is really nearly impossible. as long as you dont subsist on bread and cheese. youd be shocked to know how many vitamins and minerals are in fruits and veggies. youll easily be getting enough. the only thing id recommend adding to your regimen is b12 (i use the packets that add to water) and thats only if you go full vegan.

    a great book to check out is “becoming vegan” – its loaded with info to educate you as you embark on this healthy journey.

    I’m following the one in IBS Free at last. Not only am I not feeling better,things are overall a lot worse! I have the opposite problem as you and I figured on this diet I might end up constipated. Instead I have been having opposite problem several times a day,which is much worse than usual.Can’t figure ut why and am getting quite sad about it.

    hmmm…i hate to say this then (never good news) but maybe fodmaps arent your issue?? i noticed the relief fairly immediately. and it definitely didnt get worse. 🙁 sorry.

    I’m going to give it a few more days. Even though peanut butter is allowed I’m going to try switching to other nuts and see if that helps. I’m soo confused by the worsening.I’ll let you know if it improves!

    Hey Elise: Thank you so much for your detailed response. That does help a lot. I think the key for me will be to make sure I’m eating enough fat/protein as part of my main meals because that has been the struggle, not feeling satisfied. Your suggestions are very much appreciated and I’ll definitely have to check out that book for even more insight. I would like to add that your site is such a wonderful resource!!     This is my first attempt at anything with nooch, all on my own. My oldest has been a vegetarian for several years but that was after moving out of mom’s house! My hubby and I need to make the change to vegetarian/vegan for health reasons, so this is my first “real” step towards vegan-ism. Oh, good golly!!! This is amazing! And so easy! Thank you so much for this. I will be looking at your other recipes, as well.
